We have an echidna that roams around the property and it makes Arlo very excited when he tries to sniff it and accidentally spikes his nose on the quills. Arlo found the echidna just around sunset (which was spectacular tonight). Today was a big day. Between watering, I managed to pick and prepared Peppermint (for tea), Old Man Saltbush in the middle (a fantastic and very sustainable herb), and bunches of lavender. They are headed for the dehydrators tomorrow.

Yet another garlic harvest almost over. Thanks to all the locals who supported Six Paddocks by purchasing locally.

A GLUT OF GOODNESS

Our excellent growing year has provided us with a glut of zucchini, cucumbers and pumpkin.

Chilli Paste

This year we have created a delicious chilli paste to add to your pantry.

It has a nice hit of chilli (Joe’s Long Cayenne - 7/10 rating) that doesn’t linger too long. The beautiful eye catching red colour is all natural.

Arlo knows when something looks HOT. And he thinks the chillies growing on this bush are too!
Well hidden under a thick canopy of leaves is a bumper crop of Joes Long Cayenne Chilli. This chilli goes particularly well added to salads and sauces.
With a medium heat rating (20-30,000 on the Scoville Heat Scale), this long vibrant red chilli can pack a punch when used whole, or be used without the seeds for a milder taste.

Feeling Hot, Hot, Hot!

The beginning of 2024 has brought sizzling Summer days and some HOT products to the Six Paddocks pantry.

Smooth Flax Lily (Dianella Longifolia)

Dianella Longifolia is an Australian native flax plant with sweet, juicy berries. Its typically vibrant blue/purple flowers bloom in Spring before the berries appear in Summer. The Dianella Longifolia is one of the few species of Dianella that produce edible berries.

The berries are dehydrated and ground to create a versatile additive that can be used in sweet or savoury dishes. Add to cakes, soufflés, jams, marinades, muffins, or cheesecakes. Use as a food dye for a natural rich blue/purple icing. Or add it to the rim of a cocktail glass.

Wattleseed (Acacia Victoriae)

We are all familiar with the Australian floral emblem, the Golden Wattle - (Acacia Pycnantha). Did you know that there is a white wattle?

The Acacia Victoriae wattle is the variety we grow at Six Paddocks. They produce a white flower and edible seeds with a nutty flavour. Our first crop of wattleseed is almost ready. We dehydrate and grind the wattleseed to create a gluten-free powder that can be used in breads, biscuits, ice-cream and cakes, as well as in casseroles and sauces as a thickener.

Wattleseed is known for its protein and, according to Australian Plants Online website, they are useful “…in diabetic diets, as the carbohydrates are absorbed quite slowly, so providing energy over a long period.”

Wattleseed powder is a wonderful caffeine-free coffee substitute that can be used to make wattlelattes and wattlechinos. Delicious in the base of a Tia Maria cheesecake (oh my!) or marbled through a homemade ice-cream. Use your imagination to create new recipes or search the web for wattleseed uses for more ideas.

Arlo's French Affair

Arlo is a connoisseur of all things french. He has inspected and approved our French Nouveaux Garlic harvest.

This is a new breed of garlic created by the Tasmanian Gourmet Garlic company. It is hot, pungent, and creamy. Described by the Tasmanian Gourmet Garlic on their website as “(…) full flavoured French Creole with rich spicy, and creamy flavours overlayed with a zing that only creoles deliver.”

This season we have had inconsistent watering due to rolling thunderstorms that are accompanied by ad hoc deluges. We may not have done this little gem justice this year, but we will definitely plant it again next year. Only 5 minutes after placing the harvested garlic in our shed, the air was intoxicating with the deliciously pungent aroma of garlic.

Summer Pleasures

This french heirloom pumpkin (Rouge Vif D'etampes) is basking in the pleasure of the Merriwa summer sun.

In one short week, from the 7th (pic1) to the 13 December (pic2), you’ll notice the changes. The colour is developing and the size of the fruit is significantly bigger. Yes, this is the same fruit.

The seeds are from last year’s crop and, because we have not introduced any other cucurbita maxima into the mix, we are able to grow true-to-type year on year. Each year we choose seeds from the high-end fruit (most attractive, large fruits with excellent flesh colour and flavour) to produce high quality crops in the years to come.
