The reverse sear is our favourite way to cook a ribeye!
Low heat first to cook evenly… then finish in a hot pan for that perfect crust.
How we do it:
1️⃣ Season generously with salt
2️⃣ Cook in the oven at 110°C until the internal temp reaches 50°C
3️⃣ Rest for 10 minutes
4️⃣ Sear in a smoking hot pan for 60–90 seconds each side
To take it to the next level:
Add butter, rosemary and garlic to the pan and baste the steak as it finishes.
Simple, reliable, and lets great beef shine.
