As the weather cools down, nourishing meals become even more important. This Superfood Salad by is packed with quality protein, healthy fats and vibrant greens to help keep you feeling your best all season long.
What you’ll need:
Salad Ingredients:
– 2 x 70g pouches Walker’s Preserved Albacore Tuna
– ¼ cup raw buckwheat
– 1 cup kale, roughly chopped
– 1 avocado, quartered
– ½ cup crumbled feta
– 2 poached organic or free-range eggs
– 1 tbsp nut and seed mix (we like pistachios, sunflower seeds and pepitas)
Herbed Tahini Dressing:
– 90g unhulled tahini
– 2 tbsp lemon juice
– 1 tbsp coriander leaves
– 1 tbsp flat-leaf parsley
– 1 tsp sea salt
– ½ cup water
Method:
1. Remove tuna from pouches and place in a bowl.
2. To make the dressing, blend all ingredients with ½ cup water until smooth.
3. Toast buckwheat in a dry pan until golden and nutty. Add boiling water, simmer for 15–20 minutes, then drain.
4. Blanch kale in salted boiling water for 1 minute, then drain well.
5. Peel and quarter the avocado.
6. Assemble by layering kale, buckwheat and feta in each bowl. Top with avocado, poached egg and tuna. Drizzle with dressing and sprinkle over the nut and seed mix.
