On Friday 28 August, we’re heading to Alluvial Restaurant at InterContinental Melbourne The Rialto for Heritage & Vine.

The menu has been designed around some seriously good pairings; from Hokkaido scallop with Taltarni Cuvée Brut to Gippsland Beef Wellington with Victorian Sangiovese, followed by artisan cheeses, Shiraz and a Neapolitan cheesecake finale with Cuvée Rosé.

$195 per person includes canapé on arrival, five courses and matched Taltarni w**es.

Behind the scenes in the w**ery.

Right now, our team is blending and cold stabilising our sparkling and still white w**es. This process helps prevent natural tartrate crystals from forming in bottle; harmless, but not exactly what you want to find when you pour a glass.

The w**e is chilled to around 0°C, seeded with cream of tartar, held cold for a fortnight, then carefully racked to a clean tank, leaving the crystals behind.

Good w**e is made in the details; and this is one of them.
