Recipe 2
Crispy orange beef with veggie egg rice. Gluten free and dairy free
Beef steaks
Bicarbonate soda
2 oranges zest and juice
3 tablespoons vinegar
3 tablespoons sugar
3 tablespoons light soy
Cornflour
Salt and pepper
Chilli or Szechuan pepper optional
Onion x 2
Capsicum x 2
Tsp ginger and garlic minced

Rice long grain steamed
Sesame oil
Packet birdseye veggie rice
Couple of eggs beaten
Shallots
Garlic powder
Other veg you want to add to the rice

Slice your beef toss through bicarbonate soda till coated and leave for 20mins covered in cling wrap
Mix cornflour salt pepper and Szechuan pepper or chilli in a bowl
Add orange juice zest sugar vinegar ginger and garlic and soy in a saucepan and bring to boil stirring until sugar has dissolved continue to simmer for 5 mins and turn off burner
Rinse the bicarbonate off the steak and pat dry on paper towel. Toss the beef through the cornflour mix and fry in batches in frypan. Once just cooked put on paper towel to add back in later. Keep the cornflour mix if you need to thicken sauce at the end
In the same frypan (do not wash) add in onion and capsicum and cook when onion is going translucent add back in the beef stir add the orange sauce in the saucepan stir through to coat everything. If sauce is runny add a little water to the cornflour to make a slurry add to frypan and stir will thicken quickly. Turn off and serve over rice

Steam the amount of rice you want I go half rice half veggie rice to be a little healthier
While rice is steaming put sesame oil in frypan and coat the bottom of pan add beaten eggs and swirl till they cover the base of frypan. Put on lid to cook the top off egg quickly. Rolll it in the pan put on chopping board and slice it up for later. Chop all extra veg you with to add if any add to the pan with the sesame oil add veggie rice cook through. Add in steamed rice stir through and now add the egg stir through. Sprinkle with some garlic powder put on plate and top with beef mix. Sprinkle shallots on top for decoration

This is truely delicious and packed with flavour and tender beef

Deli recipe number 1

Rich flavoured pumpkin soup

Ingredients
Pumpkin
Use Kent,jarradale or qld blue for the best results
Stock (use a good quality stock) I personally like Campbell’s superb stock range I like chicken to add a little more flavour
Garlic minced
Pepper and salt to taste
Carrots
Olive oil

To garnish
Chopped shallots
Sour cream

How to make
Chop pumpkin and carrots toss lightly through olive oil and roast until soft and lightly browned (this adds extra flavour)
Note I haven’t used quantities as it depends on how much you want to make. I like a thick soup so I use 1 medium sized pumpkin 6 small to medium carrots

Once roasted put in a blender or use a stick blender in a pot. I add 1 litre of the stock and the garlic 1 tablespoon is plenty or you can add more if you like

Once smooth taste and add salt pepper and even nutmeg to your personal taste. You can also add more stock if you like it runnier

Note I was making a risotto at the time and had celery and onion I had been boiling to make stock and instead of throwing it out I added it into the soup mix before blending

Place in bowl and add chopped shallots and sour cream to decorate. This adds an additional flavour profile to the soup
