2️⃣The level of CREAMINESS of the oyster is determined by its stage in the reproductive cycle. The body fat is related to the temperature of the water and algae concentrates. ⠀ ⠀
3️⃣The larger this adductor muscle is, the SWEETER the oyster is. ⠀ ⠀
4️⃣You’ll notice this “finishing” note on the back of the palette. Trust a Sydney Rock to have loads of these trace MINERALS in its environment. ⠀ ⠀
5️⃣The essence of deliciousness or UMAMI in an oyster resides in its protein and can be enhanced by salt levels present in the waters. ⠀ ⠀
