Ahhh, it feels like forever since our last Prom Country cheese intro… so we’re back with more. 🧀

And honestly, we think it’s been too long, so maybe we need to turn things up a notch this week and drop a few a little closer together. 🤭

WELCOME TO THE COUNTER — APPLEWOOD BLUE

Applewood Blue is a beautifully balanced organic cow’s milk blue cheese with a supple texture and gentle blue veining.

It starts with a mild, savoury blue character, followed by a soft sweetness, before finishing with a subtle whisper of smoke that lingers on the palate.

Not too strong. Not too smoky. Just beautifully balanced.

Suggested pairing

Try it with poached pears or apples, crusty sourdough or oat crackers.

To drink: a fig apéritif or pear liqueur works beautifully, or keep it classic with a Riesling or off-dry white wine.

✨ Best enjoyed at room temperature to let the full flavour profile shine through.

🥂 HAPPY ANNIVERSARY TO US — 8 YEARS IN MORNINGSIDE! 🧀

September 5 marks eight years since we opened the doors to our Morningside shop — and honestly, we still can’t quite believe it.

Opening a shop was never part of the plan. We were happiest travelling around Brisbane and the Gold Coast doing markets, cheese in hand, meeting customers one stall at a time.

Then, three years in, a little space at 611 Wynnum Road caught our eye.

We walked through the door and just knew.

Parking — tick.
Easy access — tick.
Great neighbouring businesses — tick.
Some of Brisbane’s best cafés and patisseries nearby — definitely tick.

It just felt right.

From day one, Morningside made us feel welcome. People popped in just to say hello, neighbouring businesses introduced themselves, and some even suggested we start making sandwiches because they wanted another food option nearby. 😂

But it wasn’t an overnight success.

We only ever spent what we had, so our range was small in those early days. There were quiet days, lonely days and definitely a few tears. But we picked ourselves up and keep moving forward.

Whenever money came in, we put it straight back into the shop — another cheese, another product, another little improvement.

And slowly, we kept building.

Eight years later, we feel incredibly lucky for the shop we’ve created and, more importantly, for the people around it — our market customers, online customers, Morningside locals and everyone who continues to walk through our doors.

And especially our team.

Every person who has worked at LFY has brought their own personality, ideas and energy to this space and helped shape it into what it is today.

We never planned for this shop to become part of our story.

Now, we couldn’t imagine our story without it.

Happy 8th anniversary to us. 🧀❤️

🧀 WHAT’S ON THE COUNTER — FIRST DROP FROM PROM COUNTRY

After yesterday’s introduction, it’s time to reveal the first cheese in our Prom Country line-up. We’re not giving you everything at once though — we’ll be drip-feeding these beauties over the coming weeks. 😏

First up: Wattlebank Mist.

Made from organic cow’s milk, Wattlebank Mist is wrapped in a soft, bloomy white coat with a creamy texture and gentle sweetness.

The quality of the milk, traditional cheesemaking methods and long maturation give this cheese much more depth than you might expect — rich, creamy and complex, with a lovely lingering finish.

Suggested pairing 🙌

This one loves good company.

Try it with fresh pear, cultured butter and crusty sourdough.

To drink, Prom Country recommend a Pinot Noir or traditional dark ale — both bring enough fruit and roundness to complement the creamy, mild character without overpowering it.

But this is definitely a cheese worth experimenting with. Try different wines, beers, ciders or accompaniments and see what works for you.

🧀 THEY’RE BACK! WELCOME HOME, PROM COUNTRY CHEESE 🧀

We are so beyond excited to have Prom Country Cheese back on the counter at Le Fromage Yard. It’s certainly been a minute — but they’re back, and it’s time to get excited.

Over the coming weeks, we’ll be bringing you a number of cheeses from these amazing Victorian producers, including a few organic, raw milk cheeses.

Raw milk cheese is one of the questions we get asked about most in-store, so we’re genuinely stoked to hear what you think.

But first, a little about the people behind the cheese.

We first visited Prom Country Cheese in July 2022 during a whirlwind four-day trip through Victoria, hunting down brilliant producers to bring back to Brisbane.

We met Burke, the previous owner, and Daniel, the current owner. We expected a quick chat, a few samples and a discussion about getting the cheeses north.

Instead, we hung around. They gave us a tour, we talked farming, cheesemaking, future plans and Daniel’s story of returning to his family farm to make cheese.

Prom Country Cheese is based at Glen Moidart on Lance Creek, where Daniel’s family has farmed since 1886. He is now the fifth generation to care for the property.

Their organic cows spend their days outdoors on a 100% pasture diet, producing the rich milk that becomes Prom Country’s farmhouse cheeses.

In May 2022, Daniel and Chelsie took over Prom Country Cheese, continuing a genuinely local, family-owned, paddock-to-plate story.

And now, after a little time away, their cheeses are finally back at LFY. ❤️

🍷 CHEESE & WINE MYTHS

MYTH: Aged cheese = big red wine

It sounds logical, right? The cheese is old, powerful and concentrated… so surely it needs an equally powerful Cabernet or Shiraz?

Not necessarily. 👀

As cheeses like aged Cheddar, Parmigiano Reggiano and aged Gouda mature, they lose moisture and their flavours become increasingly concentrated — think savoury, nutty, caramelised and sometimes almost brothy.

But big flavour doesn't automatically need big tannin.

Very tannic reds can actually clash with concentrated, salty, umami-rich aged cheeses, making the wine seem more bitter, astringent and sometimes less fruity.

Instead of simply matching POWER with POWER, try matching FLAVOUR with FLAVOUR.

🧀 AGED CHEDDAR
Try mature reds with softer, integrated tannins, fortified wines, cider or even a good ale.

🧀 PARMIGIANO REGGIANO
Lambrusco is a classic for a reason! Acidity and bubbles work beautifully with the richness. Champagne and other traditional-method sparkling wines can be fantastic too. 🥂

🧀 AGED GOUDA
Think about those caramel, butterscotch and nutty flavours. Tawny Port, Madeira or a rich oxidative wine can make a brilliant match.

THE VERDICT?
❌ Aged cheese = automatically grab the biggest red.
✅ Aged cheese = think about salt, acidity, sweetness, bubbles, tannin and, most importantly, FLAVOUR.

Does that mean you can't drink a big red with aged cheese? Absolutely not. If you love the combination, drink it!

The point is that there's a whole world of pairings beyond “strong cheese = strong red.”

Saturday, 29 August is the fifth Saturday of the month, which means we have NO market location this weekend.

But don’t panic — your cheese supply is safe. 😅🧀

If you normally stock up with us at the markets, plan ahead or come and visit us at the shop instead. The cheese counter will be ready and waiting!

A beautiful little Australian goat’s milk cheese has made its way back into the cabinet!

Made by Woodside Cheese Wrights in South Australia, Vigneron is a soft goat’s milk cheese with a delicate, creamy texture and a lovely balance between fresh, tangy goat’s milk character and rich creaminess.

It’s one of those wonderfully easy cheeses to love — approachable enough for the goat’s cheese newcomer, but with plenty of character for those who already know their chèvre.

Vigneron is also a great addition to a mixed cheese board. Its fresh, creamy character works beautifully alongside stronger aged cheeses, punchy washed rinds or a good blue.

And with Father’s Day creeping up… 👀

If Dad loves his cheese, we’d definitely make a little room for this one on the board.
