Wednesday our freight of the latest French airfreight shipment arrival at our warehouse and the counter is looking absolutely spectacular.

🫕 QUEENSLAND WINTER HAS ARRIVED 🫕

I don't care what anyone says. Once the temperature drops to 17°C or below, it's cold.

None of this "it's colder in Melbourne" or "you should try Europe in winter" business. We've done both and live in Queensland for a reason.

And when the temperature drops, our food gets heavier, cheesier, and infinitely more comforting.

Enter: Fondue.

There is something magical about gathering around a pot of molten cheese. A tradition born in the Swiss Alps centuries ago, fondue began as a clever way for farming families to use aged cheese, stale bread and local wine during the long winter months. What started as necessity became one of the world's greatest comfort foods.

At Le Fromage Yard, we like to take the classic fondue recipe and make it even more irresistible.

Forget boring, tasteless cheeses. Start with a blend of:
🧀 Appenzeller – rich flavour and savoury character
🧀 Abondance – for incredible richness and silky texture
🧀 Comte 18mths – bringing sweet nuttiness and depth
🧀 Tomyere – for extra complexity and slight salty, savoury flavour

Melt gently with a crisp dry white wine, rub the pot with garlic, and serve with stale bread, cornichons, pickled onions, baby potatoes, charcuterie, crisp apple slices and whatever else you can justify dipping into cheese.

The only rule?
Don't lose your bread in the pot. The Swiss take that very seriously. 😏

Cold weather doesn't last long in Queensland.
