Let's shine the spotlight on my take on a Snickers!

I decided to turn it into a very fancy éclair with a bunch of layers. Did I ever mention how much I love my layers in desserts?

My éclair-piping skills have definitely been put to the test with this one. Good thing you can scrape the dough back into the piping bag if they look like crap! 😉

I'm really happy with how this one turned out: it's an airy choux pastry, chewy chocolate nougat on the bottom, topped with salted caramel with peanuts throughout, and finished with a light milk chocolate and peanut butter whipped ganache and a few peanuts for that extra crunch.

It'll be available from next week!

Let me introduce you to my take on the Mars bar!

I know I shouldn’t choose a favorite, but this one is probably the one. I don’t know if it’s the layers (because I love, love, LOVE my layers in cakes) or the shape… Either way, it’s a really fun one to make and even more delicious to eat.

It looks like a popsicle, but it’s not one… because why make a dessert look like a popsicle if we can’t have a little fun with it? 😉

Airy chocolate mousse, gooey salted caramel, chewy chocolate nougat and a rich chocolate sponge, all wrapped up in a popsicle-shaped dessert.

It’ll be available from next week!

A few snippets of things I’ve been working on…

Focaccia, two new savory options… and so many more things!

Noxy got put to the test with the choux pastry, and so did my éclair-piping skills 😅 It’s been a while since I’ve had éclairs on the menu, buuuutttt they’re making a comeback.

I’m putting the finishing touches on the Spring menu, and I can't wait to share everything with you very soon!

Back for another week of sweet and savory treats! 

Here are the shop hours for the next few weeks:

Monday & Tuesday — Closed
Wednesday — 9:30am–5:30pm
Thursday & Friday — 9:30am–5pm
Saturday & Sunday — 9:30am–3pm

I’ll let you know if anything changes!

Also, a quick reminder that you can pre-order your pastries on the website for pickup at the shop during opening hours, or in Maroubra after 7pm.

I’m still figuring out how much to bake each day (it’s a bit of a guessing game, not gonna lie 😅), so if there’s something you really want, pre-ordering is the best way to make sure you don’t miss out.

The website is FINALLY back up and running!

My tech support (aka my partner) worked his magic and got everything fixed and updated.

A few things have changed, so here’s everything you need to know:

📍 Shop pickup
You can now preorder for pickup at the Mosman shop during opening hours.

🌙 Maroubra evening pickup
Pickup in Maroubra is still available only in the evening, after 7pm, at Duffy’s Corner. If you choose this option, I’ll be in touch to confirm the exact pickup time.

📦 Shipping is BACK!
Cookie shipping is available again, but only on Tuesdays. I’m still sending everything via Express Post, so your treats should reach you within 1–3 business days.... unless AusPost does me dirty 🙃

🗓️ Preorders
All pastries can now be preordered for pickup with a minimum of 2 days’ notice. Just choose the date that works best for you when you order.

So, if you’ve been waiting to place an order, the website is ready for you again (link in bio)!

And we’re back for a new week of treats, sweet AND savory!

But first, a massive thank you to everyone who stopped by over the past few days, whether you popped into the shop, said hello, grabbed some treats, sent me a message or followed along from afar. It’s been a pretty wild few days, and I’m still taking it all in!

Here’s when you can get your hands on some Quokka treats this week:

Wednesday 9:30am–5:30pm

Thursday & Friday 9:30am–5pm

Saturday & Sunday 9:30am–3pm

I’ve got lots of baking to do, and I also need to add all the finishing touches to the Spring menu… so there’s still plenty happening behind the scenes 😉
