Before the doors opened on the final day of the Good Food & Wine Show, we managed to capture a few quick moments behind the scenes.

A heartfelt thank you to everyone who visited our stand, asked questions about how chocolate is made, and spent time chatting with us. The conversations and connections have been one of the most rewarding parts of the show.

Turns out the kind of “sorry” we are feeling is one filled with gratitude 🤎

We came into The Good Food & Wine Show hoping to share our chocolate with a few familiar and new faces — but the reality was far bigger than we imagined. From open to close, it has been a constant stream of conversations, tastings, questions, laughs, and shared love for good chocolate.

Truthfully, we barely had a second to pick up our phones or take photos of our stand. And while we wish we had more to share visually, we’re incredibly grateful to have spent every moment with you.

Thank you for showing up for us. Hope to catch you on the last day!

How do you eat your chocolate?

Most people just rip open the packaging, break of a bite size piece, stick it in their mouth and start chewing.

No, no, no, no, no!

That's all wrong.

Did you ever wonder why chocolate prices vary so much from a few dollars right up to more than $20 for a single bar? It's not just fancy packaging. It's not just stupid rich people buying the expensive stuff.

There's a reason some chocolate is expensive, and smart people know why it's worth it.

You don't eat chocolate to get full. You eat chocolate for the flavour.

So what's the proper way to experience chocolate?

We'll give you a hint - it involves all 5 of your senses.

You probably didn't realise that you can listen to chocolate, and what you hear will tell you a lot about what to expect when you put it in your mouth.

Check out our chocolate eating guide to become a pro chocolate taster, and more importantly an expert in identifying chocolate worth eating.

How do you eat chocolate? Crunch crunch gone or savouring the whole experience. We’d like to believe that chocolate isn’t for rushing or filling up. See the colours first—they tell you if it’s dark or milk. Smell it, let it sit for a second. Then take your time and allow the flavors fully activate.

Why cocoa deserves its superfood status: Cocoa is naturally packed with minerals like magnesium, iron, and potassium, plus flavonoids and antioxidants. The higher the cocoa content, the more concentrated these nutrients are, making dark, minimally processed cocoa a nutrient-rich pantry staple. Learn more

It's official - we're looking for more cocoa growers!

Thanks to Greg McLean and the fabulous team at The Cairns Post and News.com.au who shared this story today.

Australian grown cocoa is mostly really good quality, and typically has a far fruitier and less bitter taste compared to cocoa grown in the larger cocoa producing regions such as West Africa and South America.

‼️True story: The very first commercial customer of Daintree Estates in 2011 was a chocolatier in Belgium!

We'd love to be spreading chocolate love around the world, but right now we can't even keep up supplying our long-term customers right here in Australia and have been forced to turn away some of our largest customers.

Some say having more demand than supply is a good problem to have. Actually, it's devastating and incredibly frustrating.

We've been delighted over the past few weeks to speak with several farmers in Far North Queensland about growing cocoa, and if the expressions of interest actually go ahead, we're expecting to more than double Australia's cocoa volume in the next 5 years.

The more cocoa we grow, the more chocolate we can make. The more chocolate we make, the better the economics influencing pricing, so ultimately the more cocoa we grow in Australia, the lower the price of your Australian grown chocolate gets.

That's good for everyone!

If you know of a farmer in Far North Queensland who might be interested to consider a 1-2 hectare cocoa plantation, tell them we'd love to chat.
