- Beef Marinade 🥩 (serves 3): 500g rump steak (thinly sliced), 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp cornflour, ½ tsp garlic powder, 1 tbsp olive oil.
- Sauce 🥫: 100ml water, 1 tsp chicken stock powder, 1½ tbsp light soy sauce, 1 tsp dark soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil, 1 tsp brown sugar, ½ tsp white pepper. Note: Extend this with more water, or more of other ingredients if you find it’s not enough for the stirfry.
- Stir Fry 🍜: Olive oil, 1 red onion (thinly sliced), 1 large carrot (matchsticks), 4 spring onions, 3 garlic cloves, 1 tbsp grated ginger, 300-400g egg noodles, Salt, to taste,
Method 🧑🍳
NOTE: If you don’t have a super hot burner, the best way to cook this all is by doing it each step in batches. Let the pan get really hot. Cook. Remove. Repeat. 🚨
1. Combine sliced beef with marinade ingredients & leave for 15 min. Then, separately mix together sauce ingredients in advance.
2. Heat pan over high heat with olive oil. Sear beef for 60–90 seconds, toss, then remove before fully cooked.
3. In the remaining steak fat / oil. Stir fry the onion & carrot for 3–4 minutes, then add the spring onions, garlic & ginger until fragrant. While this is happening, prep your noodles.
4. Add more oil to pan, push veggies aside, then add noodles & leave undisturbed for 30–60 seconds to lightly char.
5. On top of the noodles, add the sauce & cooked steak back into the plan. Toss & mix until everything is well coated + sauce is thickened.
6. Once complete, taste & adjust seasoning, then serve + finish with more spring onion, sesame seeds, chilli oil & a squeeze of lemon if desired.
As usual, shoutout for the quality protein. Their rump took this recipe from simple to SUPER!! 👊🇦🇺
