"'Think like a cow" is one of farmer David's philosophies, and it shapes everything that's done on the farm. High quality food, large paddocks to roam and a whole lot of care. Great cheese starts with great milk and great milk starts with happy cows. Without that, there would be no Tarago Cheese! We take pride in every step of the process, from the paddock to the finished product.

Ever noticed our Shadows of White and Shadows of Blue have a warmer, more golden colour than many imported cheeses? There's a reason for that and it starts here in the paddock. Our cows are pasture raised, so they spend their days free to roam the paddocks and eat fresh grass year-round. That grass is naturally rich in beta-carotene, which carries through into the milk, giving a whole new meaning to paddock on a plate!

Here at Tarago, we've grown and evolved but one thing will always remain the same: our passion for honest, locally crafted cheese that is true to its roots and close to its original source. Much of what we do remains unchanged β€” from cutting curds by hand to carefully turning each wheel during maturation.

Our milk has always come fresh from our own farm right here on the same land as our factory, still making us a true farmhouse cheesemaker. Over the years we’ve continued to refine our craft, from Shadows of Blue becoming a favourite for many, to now introducing our newest cheese, Shadows of White.

Did you know that back in the day, we used to have a tea room where you could buy Devonshire teas and cheese? Thank you to Jo for sharing this with us! Let us know if you have any fond memories of Tarago or the first time you tried Shadows πŸ’™

Our Shadows of Blue & Brie 'Sundaes' were a crowd favourite at the Sydney Royal Easter Show! Topped with a drizzle of honey and a sourdough cracker, it was a creamy, indulgent twist that had everyone coming back for more. Didn't get the chance to try one? We'll be serving them up again at some of our upcoming shows. Keep an eye out!

Making our Shadows of Blue, blue!

Spiking our wheels is what allows oxygen into the cheese, which activates the Penicillium Roqueforti (blue mould). This slowly grows and develops over the 8–10 week maturation process, creating the distinct flavour profile. Even spiking means the mould develops evenly throughout the wheel, so it is important to get it right!

There's a reason every wheel of Shadows of Blue is salted by hand: even coverage is everything! The salt draws out the moisture and helps form the natural rind. A small step, but one we never skip. Bookmark this for the next time someone says "cheese is just cheese." πŸ˜‰
