Hi All,

This weather has been all over the place lately — hot, muggy, windy, and wet!

Just like us, our fluffy bum‑nut friends feel the changes even more, so their laying has slowed a little. But don’t worry — our girls are still working hard to deliver their eggy goodness in time for Christmas and the holiday season. Santa’s little helpers are doing their best!

Currently there is limited stock in store at Little Stray Winds @ $7 per dozen.

Pop down to Little Stray Winds in Woodburn to grab your eggs before or after Christmas Day, and while you’re there, treat yourself to a coffee or something delicious to eat or drink.

Little Stray Winds will be closed Christmas Day and New Year’s Day, but otherwise trading as normal: 6:30am – 2:30pm, Monday to Saturday.

🌟 Hi Community 🌟

You may have seen our previous posts about Quattro Venti New Italy Lifestyle Farm Pastured Free Range Eggs, along with the food‑journey showcases of me cooking up a storm for the Broadwater Hotel. Today, we’re excited to share some big news: a couple of weeks ago, we became the proud owners of Little Stray Café in Woodburn.

Our commitment remains the same — providing the community with a quality alternative to store‑bought eggs, available for purchase in the café at $7 a dozen.

This next step in our “food and beverage journey” is incredibly exciting as we continue bringing product to plate. Our eggs will feature throughout the café menu, alongside other locally produced and sourced goods.

🌬️ A Small Name Change with a Big Meaning
To honour the hard work and dedication that built the “Stray” brand across Evans Head and Woodburn, we’re making a gentle adjustment to the café name. Over time, it will become Little Stray Winds.

Why Winds?

Because Quattro Venti means Four Winds in Italian — and this café is a natural extension of our broader vision, a little “stray” offshoot of our business model that fits perfectly with who we are becoming.

Bradd and I want to thank Damien and Jess for entrusting us with their legacy. We’re committed to honouring what they built while introducing an elevated food offering — a touch of gourmet, while keeping things real and approachable.

We’re excited to announce that Quattro Venti - New Italy Lifestyle Farm, Pastured Raised Free Range Eggs are now supplying Little Stray Café in Woodburn!

This is a big step for us as we grow our local community footprint, offering a quality alternative to supermarket eggs.

🐓 Our girls work hard, and now their efforts can be enjoyed in our local community — in every bite of delicious dishes made with fresh, local, and lovingly raised eggs.

🥓🍳 Just imagine a Bacon & Egg Roll, knowing the eggs come from happy, content, and very spoilt chickens.

Ouch! I had a feeling one of the girls had laid a whopper today—the noise coming from the Chicken Caravan 130 was something else—but I never expected a 95g egg! That’s our biggest yet since starting our pasture-raised, free-range egg business.

Feeling a bit cheeky during grading, I tried to line up the eggs by size for a photo op. It would’ve worked perfectly… if only the girls had given us an 85g egg to complete the sequence. No such luck!

Over the past few weeks, we’ve seen a steady increase in average egg size. In the beginning, most of our eggs were under 50g or in the 50–59g range, so we were mostly packing 500g and 600g cartons. But now that the flock has matured a bit, we’re seeing more eggs in the 60–70g range—hello, 700g cartons!

This whole adventure is part of our ten-year plan, and what a fun, fascinating, and humbling learning curve it’s been.

A huge shoutout to MyBelle Pantry at the New Italy Historic Museum Centre—our very first B2B partner! If you’re in the area, go check out what Michele has on offer in her beautiful local business.

Another big thank you to the Broadwater Hotel, our second B2B partner. It’s such a proud moment seeing our eggs featured in meals that customers can enjoy with a drink (or two… or three). So if you haven't had the opportunity to call in for a drink and a meal at this fabulous local pub, then make sure you do, It's well worth it!

Finally, we’re incredibly grateful to our loyal direct customers. Being new to the region, delivering eggs door to door has been a wonderful way to meet the community and feel welcomed.

Now, back to that oversized fluffy bum nut… we’ll see what tomorrow’s collection brings. Can we top 95g? God help that chicken.

A Culinary Adventure at Broadwater Hotel’s Mad Grub Monday!

What an incredible day in the Broadwater Hotel kitchen as we geared up for our Mad Grub Monday event! The prep was intense, the aromas were divine, and the menu — unforgettable.

We kicked things off with a global spread:

Butter Chicken paired with fragrant Vegetable Biryani

Fresh and zesty San Chow Bow

Classic Quiche Lorraine

Then, the kitchen transformed into a bustling Italian trattoria. Flour flew, the pasta machine roared, and I dove into crafting our in-house fresh pasta — made with Pasture-Raised Free Range eggs from Quattro Venti New Italy Lifestyle Farm. The result? A decadent Spinach and Ricotta Lasagne layered with a rich Italian Sausage Sugo.

🎉 Huge shoutout to Brad’s Butcher in Ballina — hands down the best Italian sausages I’ve tasted since moving to the region. Their quality truly elevated the dish.

I whipped up some café style poached eggs for breakfast this morning with our Pastured Free Range Eggs. "num, num, num!'

A tip I use to get that rounded poached egg, is to cure them for about 20mins in equal parts water/white vinegar. Using this trick allows larger volume of poached eggs to be prepped, ready to be cooked when serving larger numbers of hungry guests.
