🐷 The secret to perfect crackling. Every. Single. Time.

Here's what most people miss:
1. Score the rind deeply
All the way through to the fat. Use a sharp knife. Deep scores equal better crackling every time.
2. Pat it completely dry
Moisture is the enemy. Pat with paper towel then leave uncovered in the fridge for at least 1 hour.
3. Salt only. No oil.
Rub fine salt into every score. Oil creates steam. Steam kills crackling. Salt draws moisture out and crisps the rind.
4. Fridge overnight uncovered
This is the step everyone skips. The rind dries out further overnight. This is what separates good crackling from perfect crackling. Don't skip it.
5. Start at 240°C for 20–25 mins
High heat blisters the rind immediately. Then drop to 180°C for the remainder of the cook.
6. Never cover. Not even to rest.
Covering creates steam. Steam kills crackling. Rest uncovered and serve immediately.

Stop pulling your steak off the heat too early.

Here's the move most home cooks miss:
✔️ Season generously — salt at least 30 mins before cooking
✔️ Get your pan screaming hot before the meat goes in
✔️ Sear 2–3 mins each side, baste with butter and thyme
✔️ Rest it for half the time it cooked — non-negotiable
✔️ Slice against the grain, always

That last rest is what separates a good steak from a great one. The juices redistribute. Don't skip it.
