So understanding wines at the very micro level , what makes it tick, what does it taste like , how does it feel , where are the sensations it creates , what is its physical imprint these are the things you explore in Sensory Wine Science. Day 1 down 6 brackets of pretty outstanding wines and a chance to develop your skills and knowledge. Sunday night time to focus on the week ahead kicking out with the first of my intensive schools. Dinner well something to kick the pallet into overdrive a great blackened pork curry hell yes did this light my mouth up. Paired with what else but a Great Southern Riesling luscious notes of sweet mandarins , candied lemon and caramel . The acidity is perfect just a little bit fatter and fuller thus like a great fire extinguisher for my mouth , god I love Riesling and I love the ones of the Great Southern of WA.
