We had a sneaky Magenta Lilly Pilly Jam Special at last month's The Olive Tree Market .

If you didnt get to try it, we've made Magenta Lilly Pilly and Lemon Aspen sorbet and are giving away free scoops at Lynch's Hub this weekend....on one condition.

Magenta Lilly Pilly is listed as a vulnerable species in NSW having just made it off the endangered list in February 2025. There are only 2087 mature individuals in the wild (up from about 1300). We have germinated some seeds from last season so this weekend we are giving away a free scoop of Magenta Lilly Pilly and Lemon Aspen Sorbet on the condition that people take a baby Magenta Lilly Pilly home and love it.

Food is a great, way for people to connect with native species. And when people connect with something they want to protect it. We thought this might be a fun way to do some good so come over this weekend and help us give a leg up to a little Aussie battler thats clawing its way back from the brink.

We hijacked our own web page.

Most of you probably know that in addition to Lynch's Pantry, we run a little harbourside cafe in Newcastle called Lynch's Hub.

We've long offered some amazing vegan pastries from Oh My Days Glebe. Not because we are a vegan cafe, but because they are just the best croissants we can find. Now if you had told me several years ago that I would take buttered croissants off our cafe menu in favour of a vegan product just based on quality....I would probably have tried to run you down in my delivery van. But that's where we are, these are the best croissants I can find and you don't feel like you've eaten a stick of butter when you are done.

Anyhow, our customers kept asking for more so we found a way to do that and we are now launching "OH MY DAYS DAYS". On the last Sunday of every month the team from Oh My Days will run a van load of their fresh baked goodies up to us and they will all be available at Lynch's Hub. Still, if you want to be sure of your delectable goodies then we recommend pre-ordering via the Lynch's Pantry webpage: https://lynchspantry.com.au/collections/pre-orders . They are just for local pick-up at the cafe on the 26th Oct though. Unlike everything else on Lynch's Pantry which is deliverable anywhere in Australia

Have you tried our chilli crisps. We have four different flavours:
- Sh*ttake Mushroom and Schezwan Pepper
- Black Truffle
- Peanut and Salted Black Bean
- Native Australian Bush Tomato.
Every single one is capable of transforming something as simple as a bowl of rice into a complex, nuanced and satisfying dish.

What a beast of a day. Great start but a lot left to do. This is a big plan, its a 5-6 year long game that I hope will be an important part of Lynch's future

Last month's olivetreemarket was a wash out but that gave us a chance to do a test run in a friends shed while it bucketed down outside. So, what do you think? We reckon our little setup has come together really well and look forward to seeing you at the September markets.
