NEW RELEASE - Where The Wild Things Are Maleny 6.0% Lemon Myrtle & Pepperberry Native Golden Sour 🍋🌿🍺

For the last four years we have been establishing a native caught mixed culture. Now that we are happy with our house strain, we can start to play around. Being something very special, we felt it only appropriate to highlight native Australian ingredients with this culture. From herbs and spices to fruits and flowers, Australia is replete with unique and interesting flavours.

Combining the exotic stone-fruit aromas and lemon-citric sourness of our Maleny mixed culture, with eucalyptic herbal and lemon menthol character of the myrtle. With the addition of delicate red berry and finishing white pepper of the pepperberry, what results is a really unique orchestra of native flavours. The herbal bitterness of the spices balances the very strong lactic sourness, with a hint of fruit and pepper at the finish. The inaugural foray into a program that hopes to garner all kinds of native flavours over this remarkable mixed culture. Available on tap and in tins this Friday.

It’s Wild Geek Wednesday 🦠🍺

Inspired by the great Houses of the Senne Valley, our Spon program is patiently growing in its form. A mixed culture of native yeast and bacteria was captured on my family farm in Maleny. In its third release, a combined effort of five years of labour, we see a 9 month barrel ferment, conditioned on Tasmania Pepperberry and Lemon Myrtle.

Words alone fail to completely purvey what this culture is. For the third time it has finished at 3.5P, with a pH of 3.1. Even with BUs pushing 15 (maybe - as we used aged hops this is a guess at best), the acidity is always consistent. Three ferments, three releases, all with the finishing specs. I believe, the unusual terminal specs are indicative of non-canonical fermentive microorganisms.

The concept for this program was always to achieve a version of releases akin to that of Cantillon. With enough biomass to ferment thousands of litres, we can finally begin to play around a bit. For me, Cantillon stands apart not solely from their base expression, but due to the rich array of exotic produce they infuse, in commercially terrifying amounts. From Blue Honeysuckle, to Bilberries, Verbena, Elderflower, Gentian, various local grape varieties and musk, Cantillon’s thirst for adventure is brave.

With its isolated phylogenetics, Australia presents a truely incredible array of unique flavours. So to kick off this Aussie ambrosial adventure, we’ve started with some classics. Tasmanian Pepperberry, a dissonance inducing array of red berry and white pepper, along with Lemon Myrtle, that classic wooded lemon twang, a bit herbaceous but super citrus-y. Combined, they bring complexity. And while all those flavours are present in the beer, the inherent bitterness of the spices masks some of the acidity in the base, bringing the beer into balance.

Journey before destination (yes, we all love Kaladin); after five years of trial and error, we are ready to begin.

NEW RELEASE - Thumbsucker 6.5% Oat Cream IPA 👍🍭🍺

Thumbsucking really is one of humanity’s great self-soothing techniques. Stuck fermentation? Thumb. Surprise can design deadline to meet? Thumb. Another ten straight hours working alongside Mark while he waffles endlessly about biotransformation glycosides and thiol precursor liberation like he's auditioning for the world's least accessible brewing documentary? Immediately back to thumb.

Most people grow out of it. Some channel those impulses into brewing absurdly soft, creamy beers specifically designed to trick the brain into briefly forgetting about ageing knees, lower back pain and the irreversible passage of time.

Thumbsucker, our first Oatcream IPA in we-don't-know-how-long is an aromatic juice bomb, with loads of candied orange, lemon zest, tropical and stone fruit aromas. A wheat and oat dominant base gives sweetness, body and texture for the judicious hop additions. Cryo Pop in the mash and coolpool, for extended polyphenols release, DDHd with Citra, Citra HyperBoost and Mosaic. Loads of candied citrus with tropical fruits and stonefruit; there's a complex array of hop flavours over a sweet malt base.

It’s pillowy, juicy and deeply comforting in a way that feels medically adjacent. Available on tap and in tins this Friday.

NEW RELEASE - Road House 5.0% Hazy Pale 🥊💥🍺

There was a very specific era of film where absolutely every problem could be solved by one impossibly handsome bloke drifting into town with a mysterious past, zero luggage, and the confidence of a man who's never once paid full price for a pair of sunglasses. No one asked questions. No one checked credentials. An entire town would instantly hand this stranger operational control of several licensed venues and never mention it again.

Kinda like how we hired Brayden.

Our latest Hazy Pale crashes through the door throwing haymakers of tropical fruit and citrus courtesy of our pals CryoPop, Mosaic and Galaxy. NEW RELEASE - VHS 7.0% West Coast IPA 📼📺🍺

Friday night. Ten bucks in my pocket. 15-year-old me would swing by the local video store with a backpack full of blank VHS tapes I'd procured for the sort of large-scale copyright infringement operation only a teenager with unlimited free time and absolutely no fear of consequences could commit to*. I'd cautiously approach the counter, clutching a stack of R-rated direct-to-video horror films, hopeful that whomever was behind the register tonight regarded Australian classification laws as more of a vague community guideline than anything legally enforceable.

Success!

Once home, the sacred ritual would begin. Grab the spare RCAs and link up the VCRs. Hit play and record. Adjust tracking every eight minutes because the worn-out rental looked like it had been filmed during a hostage negotiation. Spend the entire night duplicating movies in glorious potato quality, only to end up with a fifth-generation bootleg of Maniac Cop 2 that sounded like it had been dubbed inside a running dishwasher. Then, watch it over and over again on a television roughly the size of a microwave.

The 90s ruled. Just like this tin of beery nostalgia.

Hoppy, dry and bitter, just like the good old days. A dry, pale, wheat and munich base gives structure for the Citra, Amarillo and Riwaka hops. Layers of intense lemon and orange citrus, with aromatic rubber, pine, resin and white pepper. A bit scratchy and distorted, but with real character.

NEW RELEASE - Good Morning Vietnam 6.5% Vietnamese Coffee Stout ☕⚫🍺

Good morning, Vietnam! Hey, this is not a test. This is rock and roll. Time to rock it from the delta to the W.T.B.C.!

For several years now, our long time frenemy, Nick "Hey You Know What You Guys Should Make" Sim has been relentlessly - and we mean relentlessly - pestering us to make a Vietnamese coffee stout. After years of not-so-politely telling him to sod off, we finally gave in and just brewed the damn thing for some peace and quiet.

Because we needed some top-shelf morning brown, we decided to partner yet again with our mates at , who cold batched some intense robusta, bringing that classic Vietnamese coffee style.

Think crazy intense flavours of bitter coffee and condensed milk, all in balance, resulting in a rich array of character that somehow meld harmoniously. Loads of lactose, condensed milk, Xanthan gum and dairy provide the gentle sweetness you'd expect from a Vietnamese Coffee Stout. This beer is super rich and complex, with big coffee notes and a bitter-sweet finish.

And this Friday from midday, you'll be able to try the ONLY nitro keg of this beer, plus grab some non-nitrogenated tins online and from the ze takeaway fridge.

The "Goblin Forest" is 's first solo exhibition, inspired by her love of fantasy, nature, and the unseen world. As a multi-passionate artist, the show contains a collection of different mediums including paintings, sculptures, cartoons, and clothing relating to the theme. A magical medley of whimsy and nostalgia.

This free launch event all kicks off from 6pm, so why not rally your strongest party of adventurers, stock up on a hearty meal and mead from the tavern (courtesy of barkeeper Brayden and king of the kitchen Kenny 🍲🍻), and get lost in this magical world 🧙‍♀️🧌
