☁️ CLOUD 9 - A CELEBRATION OF HAZE ☁️

The forecast for Saturday September 19th is looking decidedly cloudy.

A thick bank of haze is expected to settle over Doggett Street from midday, bringing with it nine taps of soft, fluffy, hop-laden goodness and an extremely high probability of lingering head fog well into Sunday.

To mark the occasion, we're dropping FIVE brand new WT hazies and have called in reinforcements from some of our favourite purveyors of fluffy goodness around the country.

NEW RELEASE - One Way Street 5.5% Tommy's Margarita Sour 🍋‍🟩🧂🍺

Writing these posts is considerably easier when something has gone wrong. An ingredient that seemed like a great idea at the time, but wasn't. An unnecessarily complicated brewing process. A minor catastrophe that can be retrospectively repackaged as research and development.

Unfortunately, One Way Street has given me f**k all to work with.

With little regard for Brayden's workload, we've been known to knock back a cheeky marg or five at the brewpub on a Friday arvo, so we figured it was high-time to roll out another version of our favourite cocktail in beer form. And a Tommy's doesn't exactly leave much room for interpretation.

Lime. Agave. Salt. That's it.

Finally, a recipe where Mark's approach to sodium could be considered stylistically appropriate rather than a concerted effort to experience passing kidney stones firsthand.

Lime provides vibrant citrus aromatics, while agave broadens the palate with a gentle sweetness without overshadowing the fruit. A hefty addition of salt sharpens both the citrus and acidity, giving surprising depth to an otherwise minimalist construction.

It's bright, tart, balanced and tastes remarkably like the thing we set out to make.

Absolutely hopeless material for a social media post.

NEW RELEASE - Blue Hawaii 6.0% Mai Tai Sour 🍊🌴🍹

Few cocktails have endured quite as much creative interpretation as the Mai Tai.

What started life as a fairly specific combination of rum, lime, orange curaçao and orgeat has, over the ensuing decades, become shorthand for "toss some tropical s**t in a glass."

Pineapple juice? Sure. Passionfruit? Why not. Blue Curaçao? F**k it. Half a fruit salad, three different straws and enough foliage to provide a nesting habitat for a small migratory bird? Congratulations, that'll be $27.

Which means turning one into a sour beer barely registers among the indignities inflicted upon it.

We're taking ours back to basics. Orange and Tahitian lime provide bright citrus aromatics, while almond, molasses and bitters converge to recreate the unmistakable profile of a classic Mai Tai. A restrained sourness preserves the citrus without overwhelming the more delicate bittersweet interplay, allowing the cocktail to remain immediately recognisable.

NEW RELEASE - Bliss Hard Cherry & Vanilla Cola + Bliss Hard Strawberry & Lime 🍒🥤🍓

Blisssssssssss is back! It's been a while between sodas, but we're at it again with two brand spankers, one of which (ze cola) was chosen by our "Design Your Own Bliss" competition winner, Andrew - who scores 4 cases of his own concoction for his troubles.

🍒 Bliss Hard Cherry & Vanilla Cola 5.0%

A nostalgic take on classic cola, with subtle cherry bringing a touch of fruitiness before vanilla rounds things out with a smooth, creamy finish. It's rich, fizzy and decidedly confectionery, without straying too far from the cola we've all been drinking since our primary source of income was pocket money.

Turns out allowing the general public to make product development decisions was, on this occasion, an excellent idea. Please don't let it go to your heads.

🍓 Bliss Hard Strawberry & Lime 5.0%

Meanwhile, we've gone considerably more straightforward with number two. Strawberry. Lime. Booze. A combination requiring approximately zero explanation, but we'll do it anyway.

Juicy strawberry brings the sweetness, fresh lime cuts through with a bright citrus tang, and the whole thing finishes crisp and dry, and dangerously easy to put away.

In hindsight, there may have been some flaws in the methodology. But the results are in, and we're not about to start questioning science.

NEW RELEASE - Tombstone 10.0% West Coast TIPA 🪦🎩🍺

Now I ain't no expert on frontier employment law, but I'm reasonably confident "Town Sheriff" would've ranked among history's least attractive career opportunities.

Long hours, zero job security and constant risk of spontaneous lead poisoning. Similar to Mark's role as head (only?) brewer, until we sort out whatever's flaking off the underside of the mezzanine.

In tribute to that rich tradition of avoidable hardship, we'd like to introduce our 10% Triple IPA.

When the beer is this big the focus has to be on drinkability. A super lean base, fermented cold and dry, allowing the alcohol sweetness to be the balance. Bright citrus hops of Citra and Amarillo give a snappy and aromatic turn. The stakes are high, outlaws are moving in and it's time to clean up this town.
