Combining the skills of a Chemical Engineer, PhD in Agribusiness, PhD in Science and an MBA, we set to work establishing Wollongong's first distillery. As a company passionate about producing premium quality spirits, Headlands has an unwavering commitment to utilising the highest quality Australian grown grain, sourced from the fertile Riverina region. Our partnerships with the farmers allow us to

Native Illawarra Plum picking season is now in full swing and our no.1 pickers Elizabeth and Chris have been hard at work. It takes a lot of experience to pick fruits that are perfectly ripe and these guys only give us the best. 🙏 This native fruit is used in our Tidal Lines Gin, Illawarra Plum liqueur and indirectly in our Illawarra Plum Cask Whisky.

It was a big night supporting and their incredible research into curing spinal cord injury this week! We were thrilled to donate pre-release bottles of our new Spanish Sherry Cask whisky (which you should definitely have a look at on our website) and it was amazing to see them help raise funds for such an important cause.

It was even better having royalty like the great join on the night to help the fundraising effort. We’ve got exciting things ahead for our whisky… and we’re all hoping for even bigger things ahead for SpinalCure’s mission. 🥃✨

Pre orders are now live for our 10th Anniversary celebration release! A 3 set of 700mL authentic Spanish Sherry cask whiskies. All single cask, 7 years old. Palo Cortado, Oloroso and Pedro Ximenez. Each 700ml 46% ABV. The 3 bottle set is currently on sale for $350 or $140 per individual bottle. Shipping or pickup December 1st.

PX cask: Raisins, date syrup, fig cake, dark chocolate and orange marmalade

Oloroso cask: Dried fruits, walnut, almond skin, rancio, leather, to***co leaf, cocoa

Palo Cortado cask: Orange marmalade and citrus oils, polished oak, chamomile, hazelnut and cedar
