TRUFFLE TIP #3 — AROMA
This week we’re talking about the first — and most important — clue a truffle gives you: aroma.

Before you slice, before you shave, before you dream up what dish it’s destined for… aroma tells you everything.
Is it ripe? Is it ready? Is it singing or still whispering? A good truffle announces itself long before it hits the plate.

We’ve opened up a few of our past blog posts so you can dive deeper into the science, the mystery, and the sheer joy of truffle aroma.

Winter’s creeping in, so we’re racing around “tidying up” (chaos with purpose). Latest mission: convincing the new trough to cooperate with the old ones. Frank says it’s a plumbing drama of our own making. He’s not wrong.

I did eventually open the gate. Wait till the end when all the calves come through .

Truffle Tip #2
Think of fats as the truffle’s megaphone. Early season truffles whisper, and butter, cream, and cheese help that whisper bloom into a full‑bodied aroma.

No need to overcomplicate the dish, the magic is already in the truffle.

UPDATE FROM THE TRUFFIÈRE

I had a craving this week, one of those deep, unmistakable, season‑is‑getting‑closer cravings, so I made myself a raclette toasty.

It just wasn’t the same without that intoxicating hit of winter magic.
So yes — roll on truffle season.
Bring on the aroma, the hunts, the harvest, the whole delicious chaos of it.

Not long now.

It’s that time again the annual photo where the fog settles low, the mornings bite a little harder, and the colours slip quietly from autumn into winter. Subtle as a whisper, beautiful as ever, and proof that Mother Nature loves a slow fade more than any of us.

Truffle season is nearly here… and we’ve been quietly working on something behind the scenes.

This year we’ve created a series of 14 Truffle Tip videos that we’ll be sharing each week throughout the season, designed to help you get the absolute best from your truffle experience.

Whether you’re buying your very first truffle or you’re already truffle-obsessed, we’ll be sharing practical tips, little insights, and answers to the questions we hear every season.

This week’s video is the beginning, a quick look at what we have planned.

Our first Truffle Tip drops next week, and we’re starting at the beginning: Early Season Truffles. What are they like? How do they differ as the season progresses?

Make sure you follow along so you don’t miss a tip and can get the most from this season’s truffle purchases.

The countdown begins…

Frank the truffle dog is officially back in pre‑season training mode tail doing those helicopter rotations as he goes. Luna, of course, is supervising with her usual golden retriever gravitas.

And the big news all our market dates are locked in. Every Saturday, every early morning, every chance to share the aroma of winter with you is now confirmed and up on our website.
