LardAss Butter Handcrafted cultured butter made using cream from grass-fed cows of Victoria. Lard Ass was born out of a passion for dairy.

A dairy farmerโ€™s daughter, our butter comes from a recipe my parents used when growing up on a farm just outside Timboon, Victoria. To me this recipe symbolises natural, sustainable, wholesome food. Today Lard Ass continues this tradition making butter by hand using rich cream sourced only from south west Victoria, the home of happy, grass-fed cows.

Butter making. Whenever I tell people I'm a butter maker I love the hand actions they make to be sure we are clear on what I mean by butter maker. Some do the arm action like turning a handle around (old wooden churns were designed like this) or they grasp an invisible handle in the air like holding a broom with 2 hands and move it up and down .... like how OLD do they think I am?? ๐Ÿซฃ

Hand actions aside have you ever made your OWN butter?!

I see so many stories on my social feeds about making your own butter and itโ€™s great to see. It's so simple... messy... but simple. If you do want to make your own butter, there are 3 key things to know before you start:

โœจ Tip #1 โ€” Good cream = good butter. Full stop.
Source the freshest fattest cream you can find. Grass-fed if you can get it. The richer the cream, the more golden and delicious your butter will be. Make sure there is nothing in it other than cream and has a fat content around 40%. Pasteurised cream will ensure your butter keeps longer.
โœจ Tip #2 โ€” When it looks like it's gone wrong, it hasn't.
That moment when it goes all grainy and liquidy and weird? That's THE moment!! That's butterfat doing its thing. Keep going, don't panic, you're basically a butter wizard right now. ๐Ÿง™
โœจ Tip #3 โ€” Wash your butter!!
Rinse it under cold water and work it until the water runs clear. It sounds fussy but it takes 2 minutes and means your butter lasts WAY longer. Worth it every time. Keep the buttermilk. Use it as a fertiliser for your house plants or vegie garden or bake a cake with it.

๐Ÿงˆ Can you leave butter out on the bench?
Yes โ€” BUT it's better if it's salted because salt is a preservative and make sure it's hidden under a lid. And here's something worth knowing: commercial butter actually handles bench life better than homemade, simply because the technology used to remove moisture today is far superior to what existed 50 years ago. Water in butter is the enemy of shelf life. Less is absolutely more. So if you're making your own at home, keep that in mind and store it smart. โค๏ธ
