De Salis is a small, minimalist winery located at an altitude of 1050m on the northern slope of Mt Canobolas on our, ‘Lofty Vineyard’ in the cool climate region of Orange. Our minimalist winemaking philosophy is borne from a desire to capture the seasonal ebb and flow, the intersection of our vines with their microenvironment and create wines that challenge the ‘industrial’ wine culture.

Nature’s fertiliser are our sheep.

Their manure and urine work as a slow-release fertilizer, feeding the vines gradually and naturally. No synthetic runoff. No sudden nutrient spikes. Just steady, balanced nourishment the way the land intended.

What they leave behind enriches the soil with nitrogen, potassium, and phosphorus, while building organic matter that improves structure, holds water, and wakes up the microbial life beneath our feet.
