A funny thing has happened over the last couple of years.

We thought we were building a butcher shop.

What we've actually built is a meeting place.

Some days people come in for steak.
Some days they come in for sausages.
And some days they just pop in for a chat.

Over the past few weeks alone we've had customers bring us home-grown limes, fresh mandarins, bikkies, recipes, stories, gardening tips and enough local gossip to fill a newspaper.

That's the part of small business that nobody tells you about.

The meat matters.

The service matters.

But the people matter most.

So today we just wanted to say thank you.

Thank you for supporting local.
Thank you for supporting our crazy sausage ideas.
Thank you for making Lakeside Meats feel like part of the Palm Beach community.

The Ring Stinger

It all started in the laboratory late one afternoon.

The Mad Sausage Scientist was happily making sausages while listening to his favourite country music playlist. As usual, the radio was turned up far too loud and MSS was singing along with absolutely no regard for anyone within earshot.

Then it happened.

Johnny Cash's Ring of Fire came on.

As MSS belted out the chorus, he suddenly stopped, lowered his goggles and stared at a basket full of chillies sitting on the bench.

Red chillies.

Jalapeños.

Bird's eye chillies.

Habaneros.

A dangerous amount of chilli flakes.

A smile slowly appeared beneath his beard.

Mrs MSS immediately recognised that smile and quietly left the room.

Several hours later, after a great deal of chopping, mixing, laughing and what witnesses described as "questionable scientific decision-making", The Ring Stinger was born.

Built on a delicious Apple, Fennel & Habanero base, this pork sausage starts off sweet and savoury...
..before the heat arrives.

And then keeps arriving.

And arriving.

And arriving.

Why Does Some Mince Go Watery In The Pan?

Ever put mince in a frying pan and found yourself boiling it instead of browning it?

Here's the truth.

When mince cooks, it naturally releases some moisture. That's completely normal.

However, larger amounts of liquid can be caused by several factors, including:

The fat and moisture content of the meat
How finely the meat has been minced
How long the meat has been stored before sale
Cooking temperature and pan crowding
Whether previously frozen meat trim has been used in the mincing process

When meat is frozen and thawed, ice crystals can damage the muscle fibres. As the mince cooks, some of that moisture may be released into the pan, resulting in more liquid.

The result?

Instead of browning and developing flavour, the mince can end up simmering in its own juices.

The Truth?

Browned mince equals flavour.
If your mince is swimming, it's not browning.

Yesterday, Maaki and I had the pleasure of attending the Family Fun Day at the Burleigh Heads & Palm Beach Croquet Club, and what a fantastic afternoon it was!

A huge thank you to everyone at the club for making us feel so welcome, and a special shout out to Ross for his patience, coaching, and good humour as he guided us through the finer points of the game. Let's just say we started the day as complete beginners and left with a newfound appreciation for the sport!

If you're looking for something a little different to do with family, friends, neighbours, or even workmates, we highly recommend getting in touch with the club and giving croquet a try. It's social, surprisingly competitive, great fun, and suitable for all ages.

Thank you again to everyone involved for a wonderful day. We'll definitely be back for another game soon!

Palm Beach, we may have a situation.

The Mad Sausage Scientist has received reports that large numbers of locals are planning to descend upon Lakeside Meats this Saturday.

The reason?

The release of the Fully Loaded Potato Sausage.

Our intelligence sources suggest the attraction may have something to do with:

• Potato gems
• Bacon
• Cheese
• Shallots
• Sour cream
• Jo’s pickled cucumbers
• Bacon dust

Authorities have advised that anyone wishing to sample this week’s creation should arrive prepared for scenes of extreme deliciousness.

There may be queues.

There may be excessive discussion about sausages.

There may be people returning for “just one more taste.”

The Mad Sausage Scientist has assured us that supplies are being prepared, but even he cannot guarantee what will happen once Palm Beach discovers a loaded potato has been turned into a sausage.

A MOMENT IN TIME

When this photo was taken, it wasn’t about the cruise.

It wasn’t about the destination.

It wasn’t about dressing up for a formal night.

It wasn’t even about taking the perfect photo.

For us, it was about capturing a moment in time.

A moment that says:

“This was us.”

Life moves so quickly.

The kids grow up.
Businesses evolve.
Dreams change.
Hair turns grey.

And before you know it, another chapter has passed.

Photographs have a wonderful way of freezing a moment that can never be repeated.

Looking back at this picture, we’re grateful we took it.

Because one day, years from now, it won’t remind us of a cruise ship.

It will remind us of where we were in life, who we were sharing it with, and how lucky we were to be there together.
