A proper shout out to Daniel and the team at .

Some people just get it. Daniel is one of them. He’s built Rock Oyster Depot around the kind of relationships that actually matter, working directly with independent farmers along the coast and making sure the story of every oyster travels with it. When our Merimbula Sydney Rock Oysters land on a plate in Sydney, the chefs know exactly who grew them, where on the lake they came from, and why they taste the way they do. That’s rare, and we don’t take it for granted.

Daniel has put our our oysters in some seriously good rooms recently, including Opera Bar. And if you’re after them straight from the source, he’s at Carriageworks every Saturday, shucking beautiful Merimbula Sydney Rocks for anyone lucky enough to walk past.

We don’t get to Sydney as often as we’d like so you bet there’s gonna be some spam on your feed when we do!

Either side of the Oysters in the House event, we got a chance to catch-up with some of our amazing partners and chat about winter menus, seasonal oyster flavours and much more.
