Rainy day? My mate organised a little beauty arvo and this is what I ended up looking like… The Phantom of the Opera! 😂 Anyone who bumped into me in a dark alley would have the fright of their life.

Honestly, the things this girl gets me to do… But I had a good laugh, and now my skin’s looking younger than ever! 😂

Easily one of my favourite days of the week 🐴🌿
There’s something pretty special about spending the day outside with the horses. I love how calm it feels, and I swear they actually listen to me… although I’m sure the endless supply of hay helps 😂
Either way, I reckon we’ve got a pretty good friendship going.. plenty of chats, plenty of pats and, most importantly, making sure everyone’s well fed 🤣🌾
Couldn’t ask for a better way to spend the day 🤎

🇪🇸🏆 Apparently Spain won the World Cup… so my Spanish teammates made me celebrate too!
I’m still Australian, don’t worry 🇦🇺😂 But these two Spaniards have stolen my heart and somehow managed to put the Spanish flag on my face.
Today: Vamos España! ❤️💛❤️
Tomorrow: back to “Aussie, Aussie, Aussie!” 😎

Whenever Pemberton gives me a sunny day in the middle of winter, I don’t waste it! ☀️🌲

I grab my walker and head into the forest to discover new trails and hidden paths, although some of those “easy walks” seem to have a very different definition of easy! 😂

About a year and a half ago, I was using a wheelchair. Today, I can walk up to 5 km through the beautiful Pemberton forest without stopping.

Every path I explore reminds me how far I’ve come. Progress can be slow, uneven and sometimes a little muddy, but every step forward is worth celebrating.

Here’s to sunny winter days, new adventures and never giving up 💚🌿

I think I’ve found my new obsession… truffle eggs. 🤤🍄
At the end of last week, I placed a few fresh eggs together with a black truffle from the stall in a sealed glass container and left them in the fridge for three days so they could absorb all that incredible aroma. If you’ve never tried it before, trust me… it’s absolutely worth it.
Today was finally taste-test day, so I kept the recipe nice and simple because when your ingredients are this good, you don’t need to overcomplicate things.
🥔 Crispy golden potatoes cooked slowly in extra virgin olive oil.
🥚 Perfectly poached truffle-infused eggs with a beautifully runny yolk.
🧀 A creamy burrata, a sprinkle of Parmesan and fresh chives.
🍄 And, of course, a few slices of the same truffle over the top to finish it off.
The moment you break the yolk and mix everything together... absolutely unreal. 😍
Now I’ve got a new problem… every time I buy a truffle, I’m going to have to buy a dozen eggs too 😂
Has anyone else tried making truffle eggs at home? 👀🍳🍄

Last week I visited the Dolphin Discovery Centre in Bunbury because I wanted to learn a bit more about marine life... and I think I left questioning whether humans are actually the intelligent species 😂🐠
I saw Nemo, loads of colourful tropical fish that looked like they had swum straight out of Finding Nemo, and some black-and-white striped fish that were honestly more stylish than me.
Then I arrived at the lionfish tank and immediately thought,
"Okay... this is officially the most beautiful fish I've ever seen." 😍
Five minutes later I read the sign and discovered that, in places where it's an invasive species, it can throw entire reef ecosystems out of balance by eating huge numbers of small fish.
So... turns out it's basically the supermodel villain of the ocean. 😂
But nothing prepared me for the octopus 🐙
Did you know it has one central brain and large nerve centres in each of its eight arms?
So while I'm still standing in front of the fridge trying to remember what I came for, an octopus could probably be solving puzzles, opening jars and exploring the ocean... all at the same time 🤣
At one point we just stood there staring at each other through the glass and I genuinely felt like I was in My Octopus Teacher.
I'm convinced I wasn't the one watching the octopus... the octopus was watching me, thinking,
"Fascinating... this human only has one brain and somehow still manages to survive." 😂
Anyway... if you're looking for something to do on a rainy day, I'd definitely recommend it. You'll leave knowing a lot more about the ocean... and you'll probably end up slightly obsessed with octopuses too 🐙❤️

🍊 Oops... I completely forgot to tell you what happened after my yoga class the other day! 😅🧘‍♀️

Feeling refreshed, I spotted some of the fresh oranges and limes from the stall and thought... "why not make a smoothie with whatever I had at home?" 🤔🍹

Best. Decision. Ever. 😍 It turned out so fresh, healthy and delicious that I'll definitely be making it again!

🥕 Here's what I used:
🍊 Orange
🥬 Spinach
🫚 Fresh ginger
🥕 Carrot
✨ Turmeric
⚫ A pinch of black pepper
💧 Water
🌿 Fresh mint

This little powerhouse is packed with vitamin C, antioxidants and anti-inflammatory ingredients. It's a great way to support your immune system, help your body recover after exercise, and sneak more veggies into your day without even noticing💪🍃

Who knew healthy could taste this good? 😋

🌧️ Well... Pemberton's weather decided to cancel my daily walk today😒☔

But it couldn't beat me! 😏 If I can't go for a walk, I'll just roll out my yoga mat instead 🧘‍♀️😂

So I ended up doing a yoga class, and honestly... it felt amazing! Although I'm pretty sure I looked more like a pretzel than a yogi in some of those poses 🤣🥨

Now let's see how many of you can stretch like I can... 😜 Challenge accepted? 💪😂

One thing's for sure: I never skip my daily exercise, rain or shine! 🌧️☀️
