Here's my delicious APRICOT RELISH recipe.
Fabulous with Meat, Cheese, Sandwiches, and in burgers & soups for a whole new dimension of taste!
2kg fresh Apricots
500g Sugar
1 teas Chilli powder
4 teas Salt
2 teaspoon Garlic
4 teaspoons chopped Ginger
8 teas Raisins or Sultanas
4 pods crushed Cardamom
1 cup Vinegar
Boil all together until thickened. (About 30 mins for this quantity).
Put in hot sterilised jars.

Our super popular pop-up shop is on again tomorrow, 23 Jan!
10am till 3pm at 422 Penna Rd.
We have plenty of fresh picked Organic Apricots for eating and cooking to enjoy in the year ahead.
I baked a couple of trays of apricots last night, to freeze in small containers for winter crumbles, pies and muffins. Just halved, sprinkled with a little brown sugar, baked uncovered at 180deg for 30 mins, let cool, then pop in takeaway containers for the freezer. Delicious!
If you are a bit nervous about making it, here's my absolute fav apricot jam recipe. Passed down the generations of good cooks in my family!
Very easy, no time wasted, Apricot Jam
2 kg apricots, stones removed, then chopped
2 kg of sugar
Combine chopped apricots and HALF the sugar in a well buttered saucepan, and leave for 2 hours or overnight to create its own juice.
Next morning, boil the ingredients for 20 mins till fruit is soft. Add remaining sugar and boil hard for 10 mins. Do a test by putting a teaspoon full on a saucer, leave to cool for 3 mins, then see if a skin is forming– it will be ready if there is a skin.
Leave to stand for 10 mins. Bottle and seal, or cool a little more, put in plastic containers & keep in freezer.

Season is now finished! Thank you to all our amazing customers.
It’s our very first pop-up shop for the season! 🎉
Goodness, it’s been a late one — but at last we’ve got plenty of those gorgeous golden balls of goodness ready to go.

We’ll have everything from beautiful first-grade eating apricots to bottling fruit, plus perfect picks for freezing, jams, chutneys and more.
• Firsts: $15 per kg
• Seconds & Jammies: $30–$50 for 5kg bags

We're at 422 Penna Rd, Penna. Look for the big apricot sign!

Fresh from the oven and made with love, these yummy apricot crumble muffins were whipped up for our amazing pickers’ morning tea — and they didn’t last long! Soft, fruity, and topped with a golden crumble, they were devoured with great gusto, along with plenty of smiles and crumbs all round. Nothing like good food and good company to keep spirits high 🍑🧁

Apricot Crumble Muffins
This recipe made 18 muffins.

Crumble Mix
1/2 cup plain flour
1/2 cup rolled minute oats
1/4 cup brown sugar firmly packed
1/3 cup desiccated coconut
1/2 tsp ground cinnamon
90g butter (chopped)
Rub all ingredients together and pop in freezer while making the cake batter. (By freezing it, the mix gets harder, so you get a crispier texture when cooked.)

Cake Batter
1 1/2 cups SR flour
1 tablespoon custard powder
1/2 teas bi-carb soda
2/3 cup sugar
1/4 teaspoon salt
2 beaten eggs
100ml olive oil
1 teaspoon vanilla
2/3 cup milk

4 medium apricots diced into small pieces

Instructions
Preheat the oven to 180C
2. Combine the flour, custard powder, bi-carb, sugar, & salt in a large bowl.
3. Combine the eggs, oil, and milk in another bowl or jug.
4. Add the wet ingredients to the dry. Stir until just combined. Add a tiny bit more milk if the mixture still seems too thick. You want the batter to be a soft dropping consistency.
5. Spoon 2 tablespoons batter into lined muffin tins.
6. Dot pieces of uncooked apricot, or teaspoons baked apricot on to batter.
7. Sprinkle with 1 teaspoon of crumble mixture, and pop into middle rack of oven.
8. Bake for 20 minutes or until risen and a skewer pushed into the centre comes out clean.
Cool on a wire rack, then store in an airtight container.

with oodles of first-quality, beautifully ripe fruit, plus limited quantities of bottling and jam apricots for all your preserving plans. Cash and EFTPOS available.

Apricots are going to be at Evandale Sunday Market tomorrow!
We decided to pick the last section of the orchards, and will bring plenty of Moor Park firm cooking apricots. They may need a few days to finish ripening or you could use them a little greener....

Ever made Apricot Chutney, or Apricot Pickles? (Recipe below)
We have a good quantity of firm apricots perfect for delicious jams, chutneys and pickles! Or for freezing for later.

Pickled Apricots with Spices *just made these. See pic....yum!
Great served with beef, lamb, pork, poultry or fish
1 kg Semi Green Apricots
½ cup Sugar
1 ½ cups Water
1 cup White wine vinegar
1 Cinnamon stick
1 tsp Cloves, whole
2 Star anise
Halve the apricots and remove the stones.
Bring the sugar and water to the boil in a large saucepan, stirring to dissolve the sugar. Add the vinegar and spices and simmer for 5 minutes.
Add the apricots and poach, until cooked. Pack into sterilised jars and top up with the strained boiling syrup. Seal with vacuum seals.
Pickled Apricots with Orange and Cardamom
1 kg apricots
3-4 500ml jars
600ml apple cider vinegar
300ml water
1 cup sugar
4 large pieces of orange peel
12 cardamom pods
4 cinnamon sticks
1 teaspoon pepper corns
Prepare apricots, deseed and cut into quarters
Prepare the brine by simmering together vinegar, sugar & water in a saucepan
Sterilise jars and lids
Place the orange peel and spices in the bottom of each jar
Pack the fruit into the jars
Pour over the hot brine – reheat if it has gone cold
Run a butter knife around the edge of the jar and tap gently on the bench to remove air bubbles
Wipe the rim of the jars with a clean tea towel and add the lids
Boil in a water bath or Preserving Pot for 15 minutes - keep for 1 year, once opened refrigerate and use within 6 months. Yummy with cheese, lamb, beef!
