Tonight for our cookalong we cooked chili beef. The recipe was easy to follow, and was delicious.

We served ours with some cornbread, and mashed avocado and plain yoghurt (as I didn’t have any sour cream).

I used rump steak instead of sirloin, and instead of the Serrano chilies I used jalapeños.

Will definitely add this to my rotation. We’ve both gone back for seconds.

This week’s cookalong dish is this beef chili. I am always game to try a chili dish after living in Canada for awhile and ‘chili cook-offs’ were quite the thing.

Tonight we cooked these steamed pork ribs with garlic sauce.

They were finger licking good. We got so involved in making them that we forgot to marinade them for the full time. I think they got about 10 minutes, not the 15 minutes. I don’t think it made much difference to the final flavour. I didn’t have any potato starch so used cornflour instead - they still looked amazing and glossy.

I try not to have to wash the bowl when I don’t think I need to. I scraped as much of the sauce out and skipped the washing step before cooking the rice.

When putting the ribs in the varoma, I scrunched and wet the baking paper before putting the ribs in. Then decided there were too many to put in the tray, so split them between the dish and the tray. I did put a trivet underneath the bottom layer of paper to make sure the steam could get up to the tray. I also split the water between the two as well as the sauce. At about the half way mark, I swapped the ribs in the dish for those in the tray.

They would go really well on a grazing plate without the rice too. We thoroughly enjoyed ours.

Tonight for our cookalong we made the chicken meatballs stroganoff. Yum yum - despite an accident with my cayenne pepper!

Thoroughly enjoyed tonight’s dish.

It said to make 20 meatballs, but I ended up making about 30 - smaller ones. I started by using a soup spoon to make them but didn’t get enough, so I split each one in half. Just managed to fit them all onto my tray.

We didn’t bother to wash the bowl before making the sauce - I figured it would just add to the flavour. When I was prepping for tonight I was tapping the side of the cayenne pepper container to get a few pinches when a whole clump dropped into my container (which already had the paprika and salt in) so I removed some of the cayenne pepper that was surplus to requirements. Needless to say I could have removed a bit more, but I did enjoy the kick it gave. I would say I had about double the amount to what the recipe suggested.

We also just used all the 200 ml crème fresh instead of the 150 gm, otherwise it may end up in the frig to be discovered in a week or so’s time with stuff growing on it!

For those who are not fans of the cabbage noodles, simply omit them and cook up some mashed potato or noodles while the TM is cooking the stroganoff. I think our left overs will likely have mash to accompany them as my husband is a mash potato fanatic.
