We are definitely getting snippets of winter weather lately with brisk mornings and cold nights.

So we thought we'd take your palates on a journey to some sunshine in this next box.

Imagine being on a seaside town in Catalonia, Spain, while you enjoy our entrée of lightly smoked duck breast with a luscious romesco sauce.

The romesco sauce, made with smoked peppers and almonds, was originally created by Spanish fishermen to accompany their seafood catch. Over time, because of its rich and rustic flavours, it's also used to pair with meat

To me, an apple tart is such a great way to finish a meal. It has great contrasting textures between the soft baked apples and crispy tart shell.

I'll be using Granny Smith apples in my apple tart for this box. It adds a nice tanginess to it. And just for a bit of indulgence, I'll also pair it with some salted caramel 😋

I will take a week off to put my feet up and catch up on all the books and movies on my ever-growing list.

~Feeling A Little Nutty This Weekend ~
Seeing chestnuts on the shelves is a sign that cooler weather is on the way and Autumn is truely here!

Every year, the same memories come back to me - long walks in the woods with my grandfather, foraging for mushrooms, and always returning with plenty of chestnuts too.

Roasting them on the open fire and peeling them while they were still warm was a real pleasure!

For this box, I will use the chestnuts several different ways in the dessert and also pairing it with blackcurrant

~Who's Egg-cited For Chocolate?~
It is impossible to think about Easter without thinking about chocolate (speaking from personal experience 🤭) so for me, it's Easter everyday!

While out doing my shopping, I've noticed that there are now so many different flavours of Easter eggs. The one that caught my eye was the Cherry Ripe ones. The mix of cherries, chocolate and coconut is such a great combination so I thought I'll use these flavour profiles to make my dessert for the Easter long weekend.

Pork belly is one of my favourite proteins to cook with. It is such a versatile cut of meat. Whether it's roasting it to get a crispy skin or braising it for that melt in the mouth texture, the balance of fat and meat is irresistible.

For this box, I will braise it. To do this, I like to prepare it a day before, scoring the skin and rubbing it with salt and spices then resting it overnight.

The next day, I will cook it slowly in a tasty stock and adding white wine, tomato and herbs.

And since we are officially in Autumn, I am going to pair it with some in-season quince.

~Mirin - the Sake of the Kitchen~
Using Japanese ingredients can be intimidating, but a good staple to start with is mirin. A fragrant, sweet rice wine used in Japanese cooking to add sweetness. I often use it as a substitute for sugar, especially when cooking tomatoes. Not only does it enhance the natural sweetness of the tomatoes, but it also gives it a beautiful glossy finish.
This week, I have also added it to the braised eggplant, which I think is a great accompaniment to the seared beef fillet.

Just because the weather is heating up, it doesn't mean that we have to say goodbye to dishes that have lots of spices, like curries.

Many countries have their own version. Whilst some may be laden with plenty of chillis to get you to break a sweat (or require a change of clothes 🥵), there are many curries that just makes use of spices to enhance the flavour.

In this meal box, our lamb curry is not intended as a hot version (although for some, you may still taste the chilli), rather a flavoursome braise with a good amount of balanced spices, paired with a smooth cauliflower purée.
