Cocktail hour, but make it dangerous.⁠

Scallops dressed properly.⁠
Steak sangas doing the most.⁠
Arancini that never made it past one lap of the room.⁠
And that Korean fried chicken… yeah, it didn’t stand a chance.⁠

Then the sashimi & oyster bar quietly stole the show.⁠
Fresh slices, cold pours, a little ponzu moment, a little mignonette situation…⁠

Three decades in and the magic still comes down to the people. From the chefs plating with precision, to the waitstaff gliding through the room, the bar team shaking cocktails, and the drivers making sure everything arrives exactly where it needs to be, when it needs to be there.⁠

Events don’t run themselves. They run on great crews who care about the details, the timing, the guests and each other. That’s the real reason Ultimo has been doing this for almost 30 years.⁠

Our Executive Chef Max Ling standing shoulder to shoulder with the brilliant and creating something that felt bigger than food. ⁠

It was collaboration in its purest form. ⁠
