Seafood tastes even better when it helps make a difference. ❤️

Festival Fish was incredibly proud to support the annual Flametree Wines Luncheon, raising vital funds for the Type 1 Diabetes Family Centre.

This charity is especially close to my heart, and it was a privilege to donate the seafood for the day:

🦐 Exmouth cooked prawns, generously supported with a discount from Sea Harvest
🐟 Sashimi-grade Goldband Snapper, portioned into beautiful 160g serves and donated by Festival Fish

The Goldband Snapper was caught especially for the luncheon by Vic and Mari Filipou off Carnarvon—an incredible example of premium Western Australian seafood and the hardworking fishing families behind it.

A huge thank you to the talented chefs who treated the seafood with such care and created these beautiful dishes for the guests.

This luncheon helps the Type 1 Diabetes Family Centre continue supporting children, adults and families living with type 1 diabetes throughout Western Australia.

For me, this was much more than donating seafood. It was about supporting a friend’s charity, bringing our seafood community together and helping so many children and families.

We were honoured to play a small part in such a meaningful day. 🥲❤️

Some days in our industry are about seafood. Some days are about something much bigger. ❤️

The Flametree Wines Luncheon 2026, supporting the Type 1 Diabetes Family Centre, is a very special day for me. This charity is close to my heart because it was started by a dear friend, and seeing what they do for children and families living with Type 1 Diabetes makes you realise just how much these events matter.

Festival Fish was incredibly proud to play our small part this year by donating the seafood for the luncheon.

🦐 Exmouth cooked prawns, with the generous support of Sea Harvest who helped us with a special charity price.

🐟 Goldband Snapper, which we donated in full for the event — beautiful sashimi-grade fish, portioned at 160g and caught especially for us out of Carnarvon by Vic & Mari Filipou.

There’s something pretty special about knowing exactly who caught the seafood, where it came from, and then watching it become part of a day that helps so many kids and their families.

But the best part wasn't what was on the plate.

It was knowing we helped so many kids.

That’s what community is about — people, producers and businesses coming together and giving what they can to make a difference.

SEA HARVEST RAW WESTERN KING PRAWNS 🦐

Wild-caught from the Shark Bay and Exmouth Gulf regions, Western King Prawns are easily recognised by their distinctive blue tails, firm flesh and naturally sweet, slightly salty flavour. They are frozen at sea to protect their quality, texture and freshness.

FRESH ROTTNEST ISLAND SWORDFISH ⚔️🐟

Just landed by Festival Fish—beautiful Western Australian broadbill swordfish and that incredible swordfish belly.

Species: Broadbill Swordfish
Scientific name: Xiphias gladius

Swordfish has a clean, mildly sweet flavour with firm, meaty flesh that holds up beautifully on the grill, over charcoal or in a hot pan. Treat it like a premium steak—but don’t overcook it.

And chefs, don’t overlook the belly.

With its richer flavour and higher fat content, swordfish belly is perfect for curing and smoking to make swordfish bacon. Use it through breakfast dishes, carbonara, croquettes, pizzas, pasta, sandwiches or as a salty, smoky garnish.

Using the loin, belly and other suitable cuts also helps chefs create more value from each fish and supports better whole-fish utilisation.

Meet Adrian, getting up close with this beautiful Australian saltwater barramundi at the Humpty Doo Barramundi farm in the Northern Territory. 🎣🇦🇺

Humpty Doo Barramundi was the **first Australian barramundi farm to achieve Aquaculture Stewardship Council certification**, independently recognising its responsible environmental and social farming practices.

The farm uses a **closed-loop wetland system**, where water moves through native grasses and natural biological processes to filter nutrients, support fish health and reduce the impact on surrounding waterways. Their barramundi are also raised without antibiotics, hormones or growth promoters.
