Deep garnet in colour, with layers of blackberry, black cherry and dried fig, the 2021 Below & Above Merlot is expressive from the first pour.

Ripe fruit brings generosity to the palate, balanced by refined tannins and a subtle note of to***co leaf. Integrated oak spice carries through to an impressively long and polished finish.

A beautifully composed Merlot, drinking beautifully now and with plenty of time still ahead.

There’s something quietly captivating about a beautifully structured Pinot Noir.

The 2022 Below & Above Pinot Noir reveals a sophisticated perfume of forest floor, crushed autumn leaves and earthy mushroom, layered with concentrated dark cherry, raspberry and blackberry. Silky and focused on the palate, with fine tannins, subtle oak spice and a long, savoury finish.

Thoughtfully crafted with complexity, balance and the promise of even more to discover with time.

There’s something quietly special about a beautifully made Chardonnay.

The 2022 Below & Above Chardonnay is bright straw in colour with brilliant clarity, revealing notes of white peach, quince and fresh-cut fennel, with toasted almonds adding depth and warmth.

The focus now turns to the trees and the soil beneath them.

Our English oaks are entering an important phase of preparation, with the team focused on restoring soil health, replenishing nutrients and supporting the long-term health of the trees. By caring for the truffière now, we’re laying the foundations for a strong season ahead.

A playful, savoury take on cocktail hour, bringing the earthy depth of fresh black truffle into the mix. One of three cocktails served at our Art of Truffle Mixology evening, created in collaboration with and .perth.

With truffle season wrapped, the work in the truffière doesn’t stop.

Now it’s time for pruning, canopy management and nutrition, giving the trees and soil the care they need to recover and replenish after a season of producing truffles.

It’s all about putting back what the truffles took out, supporting healthy trees and healthy soil, and preparing for next year’s season.

The next season starts now.
