As the nights grow colder, our truffles start to ripen.

The 8 month life cycle of the truffle is almost complete.
From spore seeding/germinating in October to now, with ripening and harvesting being the last stage of the cycle.

The season is so close now, we can smell it

Time stands still for nobody

Pedro is happy healthy and has almost grown into his large ears! He will sit this truffle harvest season out but be included in future harvests.

Check this out!

In this video you can clearly see the white fungi occupying the soil on the perimeter of the truffle brûlé where the Tuber Melanosporum fungi (truffle) is located.

We are unsure to whether the two varieties of fungi are competing or coexisting but it’s quite evident that the truffle brûlé is strong.

Any ideas mycologists?

This white variety of fungi has always been present in our truffière but it is very prevalent this season.
