Over the weekend our team were busy working on our Non-Vintage Rosé, with our bottles making their way into their second ferment. This is where the fine, persistent bead and layered complexity that defines traditional method sparkling, comes to life.

Because all good things take time, these bottles then go down to laydown, where they will rest on lees for 18 months.

While this process takes a while, it is deliberately slow so that you can have a pour you will love to share around the dinner table, at lifes celebrations or just because you enjoy a delectable drop 🥂

Last night, she joined the fun at Sparkling Tasmania: The Art of Cool-Climate Fizz at 67 Pall Mall Singapore, hosted by Ben Hasko MS, MW, alongside Ed Carr, Chief Winemaker of House of Arras.

It was a pretty special night celebrating the incredible diversity of Tasmanian sparkling. Fran had the chance to share the Delamere story and explore what makes Tasmania’s cool-climate fizz so unique, alongside some of the people helping put Tasmanian sparkling on the world stage.

Coming soon… our next release of our much-loved Ratafia. 😍

If you love this special liqueur aperitif as much as we do, we think you’re going to be very happy with this one!

Ratafia first caught Shane’s attention during a trip to Champagne for Fran’s Don Martin Fellowship research, where he discovered this traditional style of fortified wine made from freshly pressed grape juice.

Now we get to share our own Delamere version with you, made from the pressing fractions of our sparkling wines.

We have a feeling this release is going to be a favourite. Who’s excited? 🤩
