🌿✨ A NEW SAVOURY HAS JOINED THE SORÉA SPRING COLLECTION!

And this one comes with a little story… because smoked salmon and I have not always been friends. 😄
I’ve tried it several times over the years, with different dressings, sauces and seasonings, genuinely wanting to enjoy it.

But every attempt ended the same way.
Nope. Still not for me. 😂
I had pretty much accepted that smoked salmon and I were simply never going to become friends.

But then, while developing Soréa’s Spring Collection, I thought:
What if I stop trying to change my taste… and instead change the way I experience smoked salmon?

And that little thought became a new Soréa creation. 🌿
I started with fresh lemon juice and zest to bring brightness and cut through the richness.

Then fresh dill, because it works so beautifully with salmon.
And cucumber, fresh, clean and refreshing, to bring balance to every bite.

But something was still missing…
CRUNCH. ❣️
So underneath it all, I created a delicate Parmesan, lemon & dill savoury sablé, crisp, buttery and savoury, to contrast with the softness of the mousse.

And then I tasted the finished petit gâteau.
Well… 😄
I think smoked salmon and I might finally be friends.

And perhaps my favourite part of creating it is that it began with an ingredient I wasn't even sure I liked.

Sometimes creating something new is simply about giving an old flavour one more chance, in a completely different way.

Spring has arrived, and with it, a new collection from our kitchen.

Over the coming weeks, we’ll be introducing the Soréa Spring Collection, a series of six seasonal creations, thoughtfully designed to celebrate the freshness, colour and elegance of spring.

Three sweet.
Three savoury.
Six completely different creations.

From delicate pâtisserie to refined savoury bites, each piece will be revealed individually, giving every creation its own moment.

And the very first one arrives tomorrow. 🌸

We won’t tell you what it is just yet…

🏉🏆 Something special has been happening behind the scenes at Soréa… and it’s finally time for the reveal.

After all the guessing, team colours and Grand Final predictions, we finally have our two teams:

And now we have our Grand Final dessert too.

Introducing the Soréa Half-Time Cake, Grand Final Edition. 🤎

When I started thinking about what I wanted to create for Grand Final weekend, I kept coming back to the idea of an iconic Australian chocolate treat, the Tim Tam.

I didn't want to recreate it. Instead, I loved the idea of a chocolate-coated, handheld treat that could be passed around and enjoyed while everyone is gathered together watching the game.

So I gave that idea a Soréa pâtisserie interpretation.

Inside each Half-Time Cake you'll find layers of soft flourless cocoa gâteau, silky milk & mascarpone cream and a soft dark-chocolate centre, all enclosed in a delicate dark-chocolate shell.

The cake and flavour are exactly the same for both teams, only their colours are different.

Each cake measures approximately 8.7 × 4.8 cm, so these aren't tiny petit fours, they're proper individual chocolate snack cakes made for sharing around the Grand Final table.

💛 LET’S TALK.

In business, we spend so much of our time focused on what needs to be done next, the meetings, deadlines, customers, targets and never-ending to-do lists.

But behind every role is a person.

Sometimes looking after the people who work with us and alongside us can begin with something very simple: making a little time, sitting together, sharing something, and having a genuine conversation.

With R U OK? Day approaching on Thursday, 10 September, I’ve been thinking about what this day can mean within our workplaces and business communities.

Not simply asking a question because the calendar reminds us to, but creating an environment where people feel comfortable enough to talk, and cared for enough to know that someone will listen. 💛
