Oysters In The House is coming to a full day celebrating two of NSW’s greatest culinary icons: the Sydney Rock Oyster and Hunter Valley Semillon.

PJ will be hosting The Perfect Pairing masterclass, exploring why these two are one of the great matches in Australian food and wine. Alongside his great mate, the brilliant John Susman AO leads Deep Dive into Merroir, a fascinating look at how where an oyster grows shapes everything about how it tastes.

Add in live shucking from the legendary Giannaros brothers, the finest Semillon producers in the state, a martini pop-up, and a kitchen firing on all cylinders, it’s going to be a very good day.

Still blown away by the response to our Charteris Winemakers Dinners at China Doll this week, completely sold out both nights within two days and filled with wonderful people, conversation, and shared bottles.
To everyone who joined us, PJ & I thank you. Your support of Charteris means so much to our small family winery.

“It’s an amalgam of wonderfully ripe citrus and stone fruit characters and meal. Comes softly spiced with daubs of crème fraîche, meadow flowers, oatmeal, crushed stone, nougat, flint and citrus curd. With its slinky textural sway and bright mineral cadence, the wine makes good use of the concentration gifted by the ‘23 vintage, with an array of pure citrus, peach and nectarine tones sliding seamlessly over the palate in a graceful arc. Great drinking!”
