Here in Australia we say what we see, which turns this beautiful Sicilian red into the black she-devil. Oops.

So we’re calling in Chef Mattia, our Venetian chef, to teach us properly. Part 2 tomorrow: the whole team has a go.

Sydney, we’ve come to you. Amelia’s at Hunter Valley Uncorked on Balmoral Beach today, Sunday 18th October, pouring a little piece of the Hunter by the harbour.
