Baked Zucchini Herb Crackers (Healthy Crunch)

📝 Description
Crispy light, and flavorful homemade crackers made with zucchini and herbs. Perfect as a healthy snack, low-carb option, or served with dips.

🍽 Servings
3-4 servings

⏱️ Prep Time
15 minutes

⏱️ Bake Time: 25-35 minutes

🧾Ingredients
1 medium zucchini (grated)
1 cup almond flour (or regular flour)
1/4 cup grated parmesan cheese (optional)
1 egg
1tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 tsp mixed dried herbs (oregano, thyme, basil)
Optional: chili flakes or sesame seeds

👩‍🍳 Instructions

Preheat oven:
Set oven to 180°C (350°F) Line a baking tray with parchment Paper.

Prepare zucchini:
Grate zucchini and squeeze out excess water using a cloth or paper towel.

Mix ingredients:
In a bowl, combine zucchini, almond flour, parmesan, egg, olive oil, and spices. Mix into a dough.

Roll thin:
Place dough on parchment paper, cover with another sheet, and roll very thin.

Cut shapes:
Cut into squares or cracker shapes using a 88 knife or pizza cutter.

Bake:
Bake for 25-35 minutes until golden and crispy.

When you travel you have to sample the local specialty. I mean that's what travelling is all about. My good friend of 37 years, Thomas joined me and we did a back roads tour through the top of Italy. We stopped for lunch and there was no menu, just what the cook had prepared for the day. A tomato dish as an entree and donkey stew and pasta as a main. Both delicious 😋

Working hard today. All alone on a 55 foot catamaran in a tiny bay in Hvar , one of the islands in Croatia. The weather has come in and the rest of my crew mates have caught the water taxi into the nearest town to look at the shops. I'm catching up on work with no distractions except the slapping of the waves on the hull.

I'll let you in on a secret, dears... For the longest time, I had this incredibly vivid memory of standing beside my Mum, patting a fluffy white dog that came right up to my waist. Sometimes I honestly wondered if my mind was just playing tricks on me! But while putting together a scrapbook of my Mum's life for my granddaughter Frankie, I found the absolute proof. A beautiful little photo from 1958 of me, Mum, and our Pomeranian, Bassie.

Going through these old boxes has been such a therapeutic labour of love. Scrapbooking isn't just about preserving photos; it's about keeping those precious stories alive for the next generation. The third part of my working holiday starts today. My friend of 37 years from Germany, Thomas and I are camping through the top of Italy for 5 nights in his camper van. Travelling the back roads in the countryside and catching up on all that has happened since my last trip to Europe.
