Working from home today and my stomach is yelling at me that its lunchtime. Check supplies. One stale hamburger bun, half a Monikas tomato, one Monikas cos lettuce and a portion of Collins Wild Caught Barramundi. A quick toast, slice and panfry and SCORE!!! I’m not sure how I’m going to tackle this beast of a Barra Burger but bring it on, I’m starving mmm

I am loving these warmer nights. Beautiful sunsets, warm breezes and the smell of everybody firing up their BBQ’s 😆 Not to be outdone, I tried my hand at cooking our beautiful N.T tropical lobster and new season green N.T U6 tiger prawns over charcoal. From all the mmm’s and happy faces only one word was heard “Delicious!” While I realise the quality of the products makes it much easier to get it right I am still putting this on be in my pocket. Watch out Pete, looks like this summer I’m about to give you a run for your money 😜😋😋😋

I must confess that peeling prawns is not a task I enjoy. Nevertheless, upon learning my friend's technique of cutting them straight down the middle and grilling them, I was instantly converted. They cooked consistently and allowed for easy extraction of the meat with a fork or fingers if desired. I slightly undercooked mine to allow for continued cooking in the shell and prevent overcooking. To finish, I topped them off with a drizzle of herb garlic butter and a squeeze of lemon. The result was effortlessly delicious.
