Working from home today and my stomach is yelling at me that its lunchtime. Check supplies. One stale hamburger bun, half a Monikas tomato, one Monikas cos lettuce and a portion of Collins Wild Caught Barramundi. A quick toast, slice and panfry and SCORE!!! Iโ€™m not sure how Iโ€™m going to tackle this beast of a Barra Burger but bring it on, Iโ€™m starving mmm

I am loving these warmer nights. Beautiful sunsets, warm breezes and the smell of everybody firing up their BBQโ€™s ๐Ÿ˜† Not to be outdone, I tried my hand at cooking our beautiful N.T tropical lobster and new season green N.T U6 tiger prawns over charcoal. From all the mmmโ€™s and happy faces only one word was heard โ€œDelicious!โ€ While I realise the quality of the products makes it much easier to get it right I am still putting this on be in my pocket. Watch out Pete, looks like this summer Iโ€™m about to give you a run for your money ๐Ÿ˜œ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

I must confess that peeling prawns is not a task I enjoy. Nevertheless, upon learning my friend's technique of cutting them straight down the middle and grilling them, I was instantly converted. They cooked consistently and allowed for easy extraction of the meat with a fork or fingers if desired. I slightly undercooked mine to allow for continued cooking in the shell and prevent overcooking. To finish, I topped them off with a drizzle of herb garlic butter and a squeeze of lemon. The result was effortlessly delicious.
