Over 15 years ago on a lovely piece of land in sunny Port Elliot, South Australia, Ma and Pa Carob planted their first little Carob tree. Since then one became many and our Carob family was born. Each gorgeous tree has been nurtured with organic love and a sprinkling of water and now our little trees spend their time basking in sun, smelling the sweet sea breeze and checking out their amazing sea

views of the Fleurieu Peninsula (it’s all right for some!). All the while producing the much anticipated Carob Fruit.

Adding our Organic Carob Powder gives this loaf the most beautiful rich flavour with subtle caramel notes that pair perfectly with ripe bananas.⁠

If you’ve never baked with carob before, this is such an easy place to start.⁠
⁠
šŸŒ CAROB BANANA BREAD⁠
⁠
Makes: 8 slices⁠
⁠
Ingredients⁠
• 4 ripe bananas, mashed⁠
• 2 cups all-purpose flour⁠
• 1/3 cup Organic Roasted Carob Powder⁠
• 1 tsp baking soda⁠
• 1/2 tsp baking powder⁠
• 1/4 tsp salt⁠
• 1/3 cup honey or maple syrup⁠
• 2 eggs⁠
• 1 tsp vanilla extract⁠
• Optional: 1/2 cup walnuts⁠
⁠
Method⁠
⁠
1. Preheat oven to 175°C and line a loaf tin.⁠
2. Whisk together flour, carob powder, baking soda, baking powder and salt.⁠
3. In another bowl combine banana, honey, eggs and vanilla.⁠
4. Fold wet ingredients into dry ingredients until just combined.⁠
5. Add walnuts if using.⁠
6. Pour into loaf tin and bake for 55–65 mins until golden and cooked through.⁠
7. Cool before slicing.⁠

A ridiculously speedy, "hanger‑busting" snack recipe we’re loving from the lovely . These energy bites are great for kiddies, busy mums and also bus mums 🤣🚌

Packed with healthy fats, protein, fibre and a boost of vitamins.

You’ll Need:
8-10 Medjool dates, pitted & soaked
2/3 cup mixed nuts (walnut, cashew, pecan, pistachio)
2 tbsp desiccated coconut
1/4 cup seed mix (h**p, pumpkin, chia, ground flax)
1–2 tbsp almond butter
Splash of reserved date water if mixture is too dry

To Serve:
Drizzle with Milk Bars, melted gently to a liquid

Method:
Drain dates, reserve a little soaking liquid.
Blitz nuts, coconut and seeds in a food processor until chunky.
Add dates + almond butter and pulse to combine — add a splash of date water if needed.
Roll into balls, chill to set.

These carob-stuffed cookies are the kind you break open while they’re still warm - just to watch that smooth, creamy centre melt.⁠
⁠
A little nostalgic, a little indulgent… and made even better with carob.⁠
Save this one for your next baking day ✨⁠

Makes: 9 cookies⁠
⁠
Ingredients⁠
½ cup unsalted butter (room temp)⁠
½ cup coconut sugar⁠
3 tbsp Roasted or Raw Carob Powder - you choose!⁠
1 egg (room temp)⁠
½ tsp baking soda⁠
Pinch of salt⁠
1¼ cups spelt or plain flour⁠
Banjo Bears, for topping⁠
⁠
Method⁠
Preheat oven to 180°C (bake). Line a tray with baking paper.⁠
Beat butter and coconut sugar until fluffy. Add egg and vanilla; mix to combine.⁠
Fold in baking soda, salt, carob powder and flour to form a thick dough.⁠
Roll tablespoons of dough into balls and place on the tray.⁠
Bake 12 mins, then press a Banjo Bear into each cookie.⁠
Bake another 5 mins, cool completely, and store airtight.⁠
⁠
Tip: For extra gooey goodness, eat them warm - melted Banjo and all šŸ˜ā
