Looking for an easy winter dinner? This creamy chicken pot pie is the perfect comfort meal. Head in store to your local SPAR, grab yourself a basket, and pick up the ingredients for this classic winter warmer.

Easy Creamy Chicken Pot Pie

Prep Time: 10 minutes
Cook Time: 30-35 minutes

Ingredients
1 sheet SPAR frozen puff pastry, thawed
1 tablespoon extra virgin olive oil
600g chicken thigh fillets, trimmed and cut into bite-sized pieces
1 × 420g can cream of mushroom soup
125ml (½ cup) cooking cream
1 cup canned, drained SPAR mixed vegetables (carrots, peas and corn)
1 teaspoon dried tarragon
⅓ cup fresh continental parsley, chopped
Extra parsley, to serve

Method
Prepare the filling
Preheat the oven to 220°C (200°C fan-forced).
Heat the olive oil in a large frying pan over medium-high heat.
Add the chicken and cook for 8–10 minutes, turning occasionally, until browned and cooked through.
Stir in the cream of mushroom soup, cooking cream, mixed vegetables and dried tarragon.
Bring to a gentle simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
Stir through the chopped parsley.

Assemble the pie
Transfer the filling to a lightly greased pie or baking dish.
Lay the thawed puff pastry over the filling, trimming any excess if needed.
Press the pastry lightly around the edges to seal.
Cut a few small slits in the top to allow steam to escape.
Bake
Bake for 20–25 minutes, or until the pastry is puffed and golden brown.

Serve
Allow the pie to rest for 5 minutes before serving. Garnish with fresh parsley, if desired.
