RAW VEGAN BERRY CHEESECAKES

~You'll Need~
BASE
½ cup raw hazelnuts
2 tbsp raw almonds
2 tbsp Niulife Organic Desiccated Coconut
10 large Medjool dates, soaked 10 mins
2 tbsp raw cacao powder
FILLING
1½ cups raw cashews, soaked 4 hrs
½ cup rice malt syrup
1 cup Niulife Organic Coconut Milk (5 tbsp powder + 1 cup hot water)
⅓ cup melted cacao butter
½ cup raw cacao powder
1 tsp vanilla
Pinch sea salt
1 punnet fresh raspberries
TOPPING
100 g vegan chocolate
Freeze-dried raspberries
~Make It~
Blend hazelnuts, almonds and coconut until crumbly. Add dates and cacao powder and blend until a soft dough forms. Press into silicone moulds, filling about ⅓ of the way. Place in freezer to set.
In a high-speed blender, combine cashews, rice malt syrup, prepared coconut milk, cacao butter, cacao powder, vanilla and salt. Blend until smooth and creamy.
Place 3–4 raspberries onto each base. Pour over the chocolate filling. Freeze for at least 4 hrs or overnight until set.
Once set, remove from moulds and top with melted chocolate and freeze-dried raspberries.
Allow to thaw slightly before serving.
