Homemade Seed Crackers and Duck Foie Gras

Crisp homemade seed crackers, rich duck foie gras from the Périgord, fresh thyme and a little flaky sea salt. Simple, elegant and made for a grazing board that feels a little special.

Serves 4 to 6 | Prep time: 15 mins | Cook time: 25 to 35 mins

Ingredients:
- Chef’s Choice Certified Organic Sunflower Seeds Kernels
- 1 cup Chef’s Choice Almond Meal
- 1 tsp Lovin’ Body Organic Thyme Leaves
- ½ tsp Chef’s Choice Natural Australian Fine Sea Salt
- ½ cup water
- 2 tbsp Three Olives Certified Organic Extra Virgin Olive Oil
- Block of Duck Foie Gras from the Périgord
- Fresh thyme, to garnish
- Chef’s Choice All Natural White Sea Salt Flakes, to finish

Method:
1. Preheat oven to 160°C and line a baking tray with baking paper.
2. Combine the Certified Organic Sunflower Seeds Kernels, almond meal, fresh thyme, and sea salt in a bowl.
3. Add the water and olive oil, mixing until the ingredients form a cohesive dough.
4. Place mixture on a sheet of baking paper and roll out evenly into a thin layer. Score the cracker shapes before baking.
5. Bake for 25–35 minutes until golden, crisp, and completely dried through. Allow to cool before breaking into individual crackers.
6. Serve the duck foie gras alongside the homemade seed crackers.
7. Finish with a sprinkle of flaky sea salt, fresh thyme, and optional accompaniments such as picked onions.

There is a reason this soup feels like a full meal.

Roasted Veg, Lentil & Bean Soup Recipe

A hearty bowl with beans, lentils, grains, roasted vegetables, potatoes and kale. Thick, cosy and made for serving with crusty bread.

Serves 4 to 6 | Prep time: 15 mins, plus overnight soaking | Cook time: 45 to 60 mins

Ingredients:
- Chef’s Choice All Natural Soup Mix 7 Blend
- 2 tbsp Three Olives Certified Organic Extra Virgin Olive Oil
- 1 large brown onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, peeled and diced
- 1.5 L vegetable stock
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
- 2 cups roasted seasonal vegetables, roughly chopped
- 1 cup kale, finely chopped
- Fresh parsley, to garnish
- Crusty bread, to serve

Method:
1. Soak the Chef’s Choice All Natural Soup Mix 7 Blend in water overnight. Drain and rinse thoroughly before adding to the soup.
2. Heat olive oil in a large pot over medium heat and sauté the onion and garlic until softened and fragrant.
3. Add the carrots, celery, and potatoes, cooking for a few minutes to allow the vegetables to begin softening.
4. Add the soaked and drained Chef’s Choice All Natural Soup Mix 7 Blend, vegetable stock, and bay leaf, then bring to a gentle simmer.
5. Cook for 45 to 60 minutes, or until the beans, lentils, grains, and vegetables are tender and the soup has developed a rich, hearty texture.
6. Add the kale at the end of cooking and stir through until just wilted while maintaining its fresh colour and texture.
7. Season with salt and freshly ground black pepper, remove the bay leaf, and serve hot with fresh parsley and crusty bread.

Pear & Chestnut Tart Recipe

Buttery puff pastry, sweet pears, vanilla chestnut cream and roasted chestnuts baked into one golden, glossy tart. Simple to make, but very good at looking like it took more effort than it did.

Serves 6

Prep time: 10 mins

Cook time: 20 to 25 mins

Ingredients:

- 1 sheet all-butter puff pastry, thawed
- 1 jar Chef’s Choice Premium Selected Chestnut Cream with Vanilla
- 3 ripe pears, thinly sliced
- 200g Chef’s Choice Premium Selected Roasted Chestnuts, roughly chopped
- 2 tbsp brown sugar
- 1 egg, beaten, for egg wash
- Drizzle of Chef’s Choice honey

Method:

1. Preheat oven to 200°C and line a baking tray with baking paper.
2. Place the puff pastry sheet onto the tray and lightly score a border around the edge, being careful not to cut all the way through.
3. Spread a generous layer of Premium Selected Chestnut Cream over the centre of the pastry.
4. Arrange the sliced pears over the chestnut cream, slightly overlapping each slice.
5. Roughly chop the roasted chestnuts and sprinkle over the tart.
6. Brush the pastry edges with beaten egg wash and drizzle honey over the top.
7. Allow to cool slightly, then finish with a light dusting of icing sugar or dollop of cream.

Pear & Chestnut Tart

Buttery puff pastry, soft slices of pear and a layer of chestnut cream hiding underneath it all.

It bakes into something golden, glossy and a little unexpected, with roasted chestnuts for crunch and honey doing what honey does best.

This is the kind of dessert that looks like you spent all afternoon on it, but quietly lets puff pastry do most of the work.
