"The idea was that it would always be authentic Morris Wh**ky, not a version of the Scottish or Irish or American."

That's John Casella, who bought Morris in 2016 for its w**e legacy and spotted something else in the shed: a disused still and thousands of ex-fortified barrels nobody was using.

Ten years on, Forbes Australia has covered where that bet has landed, the Morris Single Barrel Sherry Cask. Six years in a single Palomino Apera-seasoned American oak cask, hand-selected by our Head Distiller Darren Peck, bottled at cask strength.

Where wh**ky actually starts.

Our grain comes off our own paddocks, an ideal malting variety, low in nitrogen and high in starch. It goes to a small maltster, and the malting turns those starches into sugars. Yeast turns the sugars into alcohol.

The variety is Spartacus. All of it grown in the Riverina.
