Forget the Red - drink Sherry instead?
For years Jane has built a formidable reputation as someone who can find the best bottle for anyone. So if this legend asks you to try sherry instead of a red, are you game? 100% from us.

‘Sherry’ is the English deprivation of the word ‘Jerez’, the Andalucian town from which this fortified wine originates, and since the ‘90’s, legally refers to the style of fortified wine from Jerez.
Jerez is one of the oldest wine-producing towns in Spain and has seen a parade of cultures move through and influence (Phoenicians, Carthaginians, Romans, Moors…).

There are 2 chief types of Sherry; Fino (or Manzanilla), and Olorosso. The former is aged under ‘flor’ (a protective yeast layer) and the latter allowed to age oxidatively.

Sherry is a fascinating world and we’ve only scratched the surface here, comment below if you’d like a dedicated post on Sherry, the grapes used, the Solera system, the derivations of the styles etc. Or you could just trust Jane and drink what the Queen tells you to 🙌🙌

$2.50 oysters every Tuesday

Winter belongs to oysters and tonight we’ve got some beautiful Sydney Rocks at the ready.
Native to Australia’s east coast, Sydney Rocks are a true expression of merroir (the marine equivalent of terroir) each one carrying the character of the pristine waters it was grown in. Rich, creamy, sweet and beautifully briny, they’re at their best through winter, when the flavours become even more concentrated.
A badly kept local secret, every Tuesday we serve $2.5 oysters natural with a little lemon myrtle yuzu ponzu and yuzu koshu sauce.
We then pluck something from the shelf to pair with - something a little spesh to help make the oysters sing. Tonight, it’s Domäne Wachau ‘s ‘25 Federspiel Grüner Veltliner. Aren’t we clever? 😜

This week, Charlie’s taking us to Italy’s North East for an ancient Friulian variety ; Refosco. A wildly seductive flavour profile (black fruits, coffee, almonds, dried herbs) this one’s for those who love Bordeaux blends with elegance and an acid backbone.

This bottle here is from the Colutta family which is into their 3rd generation making wine at their Friuli site.
You’ll notice that this one says ‘Refosco dal Peduncolo Rosso’ meaning ‘red stalk/stem Refosco’. This refers to its deep red stem on the vine and often indicates a higher quality grape.

An absolute must-try this winter.

Allocation arrival 🛬

A very exciting delivery dropped off this week - our allocation of the 2024 Savaterre Chardonnay. Just six bottles available, this is one of Australia’s most coveted Chardonnays and a wine rarely seen on shelves.

Crafted by Keppell Smith in Beechworth, Savaterre vines are grown on ancient granite soils, 440 metres above sea level, with meticulous organic viticulture (low yields and close planting), wild yeast fermentation and extended maturation in French oak. The result is a Chardonnay of extraordinary precision, texture and depth - a benchmark Australian Chardonnay. We thrilled to have it on the shelves, we’re thrilled for those who get to imbibe.

Shelby plunges us into the effervescent, theatrical and wildly refreshing world of Txakoli. Weirdly, that’s how we’d describe Shelby too…🤔😍
Txakoli isn’t a grape, but a distinctive wine style from Spain’s Basque coast.

This bottle hails from Bizkaiko, near Bilbao, one of the region’s three Txakoli appellations, and is made from 85% Hondarrabi Zuri and 15% Hondarrabi Beltza.

Fun fact: Txakoli is traditionally poured from a height in a dramatic ritual known as escanciar. More than just a show, it aerates the wine, enhancing its vibrant aromatics and signature freshness.
