🎉 WE DID IT! The Viral Whipped Caramel Chocolate Cake is Officially Gluten-Free!

We took Edd Kimber’s viral London sensation and gave it our own signature twist. After intensive kitchen trials, we successfully recreated this masterpiece using our exclusive, signature gluten-free flour blend made from local grain, like .

We couldn't have done it without top local ingredients from , , , , , , and the French and Brit .

🚀 What’s Next?

We are not keeping this masterpiece to ourselves. We are officially taking this project to the next stage. Our goal is to partner with a local Sydney venue to bring this dessert straight to your plate. Stay tuned as we lock in a location. We are trialling a Down Under version of Edd Kimber’s viral Whipped Caramel Chocolate Cake! 🇦🇺✨

You’ve probably seen this absolute masterpiece taking over your feed. It’s the legendary cake by that had people queuing around the block at Populations Bakery inside Corner Shop 180 in London.

🇬🇧We wanted to bring that iconic magic to Australia, but with one major twist: we are making it completely coeliac-safe! 🌾❌

To pay homage to Edd and the OG team at Populations, we are using our premium, gluten-free signature flour blend sourced from local grain alongside some incredible local and classic ingredients:

🧈 Rich Pepe Saya cultured butter
🥛 Tangy Brownes Dairy cultured buttermilk
🍫 Decadent Valrhona 70% cocoa
🍯 A touch of British classic Lyle's Golden Syrup

We aren't going to lie, we couldn't help ourselves. 🫣 As soon as it came out of the fridge, we cut a slice immediately. The verdict? Pure heaven.

Batch number two hits the oven tomorrow to perfect the texture. Once we lock it in, we will see what we can do about getting it onto the menu for all our gluten-free friends!

Our next R&D project: seeking to bring the soul of the Carpathians to Australia. We are exploring the challenge of recreating the fine Viennoiserie of our heritage, born in the old-world cafes of our ancestors and reimagined for our community here. This is a cultural legacy we hope to make modern and entirely coeliac-safe.

This Mother’s Day cake probably just looks like a simple sponge cake.

But for us, it represents four years of learning, testing, failing, and trying again.

When we first started Carpathia~House in 2021 producing patisserie, we relied on pre-made gluten-free flour blends because that was all we knew. They were safe in a sense of them being an easy choice, but we had very little control over the final product.

When we stepped away to develop our own flour, we became focused on understanding the science behind gluten-free baking properly. Texture, hydration, softness, structure, shelf life. Slowly, over time, things started to click.

This cake was the first time we asked ourselves:
Could the same flour we built for breadmaking also create a proper sponge cake?

We didn’t expect perfection. We just hoped to make something close.

But what came out surprised us. A sponge that was soft, light, airy, and still beautiful days later.

For the first time in the patisserie realm since we started Carpathia~House, we feel like we aren’t just “replacing” gluten. Like our breads, we are creating something genuinely good possibly even superior to gluten in its own right.

It may only be a Mother’s Day cake, but for us it feels like a quiet little milestone, and a reminder of why we did all of this in the first place.

A kitchen full of gratitude (and some big news!) 🥖✨

To our wonderful community,

We’re taking a quick breath today to say a massive thank you.

Lately, things have truly started to find their rhythm. Seeing our orders stabilise and hearing your feedback every week has given us the confidence to take the next big leap in our journey.

We are officially in the process of building our very own kitchen! 🏗️🍳This space is going to be the heart of everything we do next. Most importantly, it means we’re finally getting ready to launch our Patisserie and Bread range.

We can’t wait to bring those golden crusts and delicate pastries out of the oven and straight to you at the local markets very soon. 🥐🍞

Thank you for being the foundation we’re building on. Your support isn't just business to us, it’s the reason we get to turn this passion into a reality.
