CHOCOLATE CAKE, made with sweet potato 🍠
for that next-level fudgy texture (and a cheeky little nutrition boost!). It’s kid-tested, mum-approved, and it’ll be gone in about 5.2 seconds.

1) Put these in a blender.
¾ cup roasted, peeled, cold, mashed sweet potato
250ml milk
½ cup caster sugar
125ml extra virgin olive oil
1 large egg
1 tsp vanilla extract

2) Sift these into a large bowl.
¾ cup plain flour
½ cup cocoa powder
1 tsp baking powder
½ tsp bicarb soda

3) Pour the sweet potato smoothie into the flour mixture. Stir till combined

4) pour into a lined 20cm square tin

5) Airfry at 150°C for 40 mins. Cool to room temp.

6) Eat as is, or smother with frosting. I used a choc -avocado frosting. Sprinkles optional 🌈 💕

POV: you’ve been put on side-dish duty and absolutely steal the show with this!

🎄The Ultimate Christmas Side Wreath 🎄
(aka. Crispy Smashed Potatoes, Bacon-Wrapped Sausages + Baked Brie)
Serves 8

🥔 Smashed potatoes
1.5kg red-skinned baby potatoes
2 Tbsp olive oil

🥓 Bacon-wrapped sausages
12 pork chipolatas
6 rashers maple flavoured streaky bacon, halved lengthways

🧀 Baked brie
200g whole triple cream brie wheel
1–2 Tbsp honey
Thyme sprigs

🪴Dressing
¼ cup Greek style yogurt
¼ cup mayonnaise
2 Tbsp white wine vinegar
2 tsp Dijon mustard
1 Tbsp finely chopped dill
1 Tbsp finely chopped parsley

1. Place baby potatoes into both baskets of the Philips 4000 Series Dual Stacker Airfryer. Set temperature to 180C and cook for 30 minutes until tender.
2. Smash potatoes, drizzle with oil and season with salt and pepper. Return to the top basket of the airfryer. Set temperature to 200C and cook for 30 minutes, turning when prompted, until crispy and golden.
3. Meanwhile, wrap each chipolata with bacon. Place into the bottom airfryer basket.
Airfry at 200°C for 16 minutes until cooked through and caramelised.
4. To cook the brie, score the top with a small crosshatch pattern, place on sheet of baking paper. Scatter with thyme, a season with pepper, and place into the top basket. Airfry at 180°C for 8 minutes, until soft and gooey. Drizzle with honey.
5. Assemble the wreath on a large round platter or board. Arrange the crispy potatoes in a circle. Tuck the bacon-wrapped sausages in between them. Add sprigs of parsley and dill. Place baked brie in the centre. Drizzle potatoes with dressing.
6. Serve and pierce the brie to allow its gooey centre to flow.

This is my family’s new fave weeknight dinner.
👉🏻 Everyone eats it
👉🏻 a cinch to throw together
👉🏻 it’s a tray bake
👉🏻 cooked in the Airfryer!

🍣 WEEKNIGHT SUSHI BAKE 🍣
serves 4

RICE
1 ½ cups raw jasmine rice
2 tsp rice vinegar
1 tsp caster sugar
½ tsp salt

SALMON
2 skinless salmon fillets (230g total)
1 Tbsp sweet soy (kecap manis)
125g cream cheese, softened
1/4 cup kewpie mayo
2 Tbsp sriracha sauce
3 sheets of nori
Furikake seasoning (optional)

TO SERVE;
Kewpie, Sriracha, Sweet soy (kecap manis), Sliced shallots, Toasted sesame seeds, Sliced avocado, Sliced cucumber, Furikake seasoning, Toasted seaweed sheets

1.Put rice and 1 ½ cups of water into the Philips 3000 Series Rice Cooker.
2.Toss salmon fillets in sweet soy. Arrange in the basket of the Philips 3000 Series Airfryer. Cook at 200C for 7 minutes.
3.Meanwhile, combine cream cheese, kewpie and sriracha.
4. Add hot salmon, breaking salmon apart into bite sized pieces using a couple of forks, stirring until combined.
5. In a square baking dish (20cm), add 4 cups of hot cooked white rice. Add vinegar, sugar and salt, stirring until combined, Push the rice firmly into the baking dish using the back of a spoon.
6.Crush nori into bite sized pieces over the rice, scatter with a little furikake if using.
7.Spread salmon mixture over the top.
8.Airfry 200C for 5 minutes.
9. Drizzle extra kewpie, siracha (if using) and sweet soy on top of your sushi bake. Garnish with shallots, sesame. avocado, cucumber and Furikake seasoning.
10.Serve with toasted seaweed sheets on the side.

POV: You just served hot honey chicken with crispy potatoes. Both got demolished and best of all, there was no mention of the HIDDEN veggies mixed into the chicken. ✨

Hot Honey Crispy Chicken
Makes 16

½ cup coarsely grated carrot
½ cup coarsely grated zucchini
½ small brown onion, finely chopped
½ clove garlic, crushed
½ tsp salt flakes
1 tsp Dijon mustard
250g chicken mince
2 Tbsp plain flour
2 tsp ground paprika
1 egg
2 ½ cups cornflakes, finely crushed

HOT HONEY SAUCE
¼ cup honey
25g butter
1 tsp apple cider vinegar
1 ½ tbsp sriracha
Pinch of salt

1 Combine vegetables and garlic in a bowl. Add salt, mustard and chicken, smooshing it all together until combined. Snip mixture with scissors to shorten any long pieces of vege.
2 Form into tablespoon sized logs (use wet hands to stop it sticking) Then toss in combined flour and paprika, then egg and then crushed cornflakes. Airfry in one basket of the Philips 4000 Double Stack Airfryer at 200C for 16 mins.
3 Meanwhile, put all hot honey sauce ingredients into a small saucepan and bring to the boil. Boil for 1 minute, remove from the heat , pour into a bowl and allow to cool slightly.
4 Serve chicken drizzled with sauce.

Crispy parmesan chips
Serves 4

4 small potatoes (400g total), unpeeled, thinly sliced
1 Tbsp cornflour
3 Tbsp extra virgin olive oil
1 Tbsp finely chopped parsley
1 tsp dried oregano
1 tsp sea salt flakes
½ tsp garlic powder
½ tsp ground paprika
finely grated parmesan, to serve

1. Soak sliced potatoes in cold water 30 mins. Drain. Pat dry.
2. Toss in cornflour then in 1 tbsp of the oil.
3. Airfry in one basket of the Philips 4000 Double Stack Airfryer at 180C for 15 mins.
4. Meanwhile, in a large bowl, combine parsley, oregano, salt, garlic powder, paprika and remaining 2 tbsp of oil.
5. Pour hot potatoes into the parsley mixture and toss to coat. Return to the airfryer basket
Cook 200C for 20 mins until golden and crisp.
6. Serve topped with a generous amount of grated parmesan.

Don’t forget to use the handy SYNC feature if you’re cooking your chicken and potatoes at the same time. Press sync when you’re cooking the chicken and the flavour-tossed potatoes.

Last night we celebrated my beautiful mum, the Queen of our family. She’s 70 years young, the glue of our family and a huge part of why my life and my boys (big and small) life is filled with light and love every single day. She is the most thoughtful, generous and selfless human I know. An absolute blessing.
So proud and fortunate to call her my mum! ❤️
