This is my family’s new fave weeknight dinner.

🍣 WEEKNIGHT SUSHI BAKE 🍣
serves 4
RICE
1 ½ cups raw jasmine rice
2 tsp rice vinegar
1 tsp caster sugar
½ tsp salt
SALMON
2 skinless salmon fillets (230g total)
1 Tbsp sweet soy (kecap manis)
125g cream cheese, softened
1/4 cup kewpie mayo
2 Tbsp sriracha sauce
3 sheets of nori
Furikake seasoning (optional)
TO SERVE;
Kewpie, Sriracha, Sweet soy (kecap manis), Sliced shallots, Toasted sesame seeds, Sliced avocado, Sliced cucumber, Furikake seasoning, Toasted seaweed sheets
1.Put rice and 1 ½ cups of water into the Philips 3000 Series Rice Cooker.
2.Toss salmon fillets in sweet soy. Arrange in the basket of the Philips 3000 Series Airfryer. Cook at 200C for 7 minutes.
3.Meanwhile, combine cream cheese, kewpie and sriracha.
4. Add hot salmon, breaking salmon apart into bite sized pieces using a couple of forks, stirring until combined.
5. In a square baking dish (20cm), add 4 cups of hot cooked white rice. Add vinegar, sugar and salt, stirring until combined, Push the rice firmly into the baking dish using the back of a spoon.
6.Crush nori into bite sized pieces over the rice, scatter with a little furikake if using.
7.Spread salmon mixture over the top.
8.Airfry 200C for 5 minutes.
9. Drizzle extra kewpie, siracha (if using) and sweet soy on top of your sushi bake. Garnish with shallots, sesame. avocado, cucumber and Furikake seasoning.
10.Serve with toasted seaweed sheets on the side.
