Time for an update on the extract beer with LoNa. I've been through around 1/2 of the keg over the past few weeks and I feel I've got a good gauge of how it's fared.
Initial tastings were a bit interesting. Obviously with the maltose negative LoNa was going to leave behind a fair bit of sweetness thanks to the residual sugars, and that was quite prominent. Initially it tasted quite sweet and unfermented (go figure), but over time I have come around to flavour. Kind of reminds me a little of the Heineken 0.0.
Head retention and lacing is fantastic, body/mouthfeel is quite respectable also, so I'm quite impressed on those factors. Not knowing where flavour was going to land, I took it easy on the bittering charge to have a smooth, medium bitterness.
I'm going to run this back again, but this time I'm going to use a standard yeast to try and drag some of those sugars out and balance it a bit more. Overall though, very impressed with how it turned out.

Been a while between brews, but taps are running low and Xmas is in just 3 weeks 🫣 I need to restock!!!
I had a side project fall through recently, and I have 20kg of the amazing Eagle non-alcoholic malt extract base to use up, and thought.... Let's see what its like fermented... Why not right?! So 40 ltrs of Lager going down today to be fermented with LoNa yeast to see how we go. Stay tuned for an update.

It's good to be getting back to brewing regularly, feels like I've barely done much brewing this year compare to the previous few. Spring is warming up, so I figured I need to start getting some lagers brewing for the warm afternoons to sit back with after work.

So I've been pretty quiet for some time here, but there is still plenty of brewing going on, and some new recipe developments taking place, BUT...... I did a thing.... I came across a 98L electric/gas 3V system on FB marketplace for a stupidly good price (and I mean way too good), and I just had to snap it up... because why not right?!
Dare say it is a little too big for my needs, but it's better to have too much capacity than not enough right!. It needs a little TLC, and I'm going to do some reconfigurations to suit what I want it to be, but I'm super keen to get it up and running so I can see what it can do!

It's been a minute since I've had my little kettle out for a brew, but we're back into it! A couple of new recipes to create, so the perfect opportunity to get their first batches going on the pilot system.

A fun little project that I've had going on behind the scenes is this little flash pasteuriser. Although I didn't get to make it to my original design due to parts availability, I still managed to make do with what I could get and a quick redesign. With 250L going through it with no issues, I call it a win!
Cleaning all the kegs yesterday, not so fun. 🤣

It's not always the fun of brewing and drinking beer. Sometimes you gotta do the boring s #!t too. Like cleaning these bad boys ready to fill up tomorrow.

Lager Time! 🍺
I'm not one to bother filtering my beers. Time usually suffices for me, but this one is a bit time sensitive, and I need it to be nice and bright quickly. This Lager is sure to be a hit, so keep an eye on what's to come. I'm looking forward to getting this on tap and ready for pouring after a quick force carbonation.

It's been a busy start to the year with some big things in the pipeline to come. Along with getting the #39 spot in the Hottest 100 New Release Beers with , which is an awesome achievement!
Today, I put down another Lager for this beautiful weather we've been having here in Perth, now to kick back with a burger and a beer!
