For me, kimchi is all about balance and harmony.

When I design a dish and need acidity,
instead of using something simple like rice vinegar,
I prefer using kimchi—especially white kimchi—
because it has a lot more complexity.

It doesn’t just add sourness,
it elevates the overall quality of the dish.

Sometimes kimchi plays a supporting role,
and sometimes it becomes the main ingredient.

But when it does, everything else on the plate
is there to support it.

At the end of the day,
it’s always about balance and harmony.

It might sound a bit unfamiliar for non-Korean backgrounds,
but once you get into it,
there are so many ways to use kimchi in everyday cooking.

You can start small—
even using it at home in simple ways.
