We are Katriina and Izabella – aka Blondie and Bella – two best friends and mothers, married to hubbies who enjoy a round of golf each Sunday followed by a meat raffle and beer down at the local. Starting FinSki’s was an easy step, we both love food and love how it makes you feel, the experiences it creates and the memories it leaves. Our blog is about us, our heritage, our cooking and experiences

Bacon and Egg Jaffles! So simple and jaffles are just the best!

Cook your bacon on the jaffle, then place your buttered bread in the jaffle, top with half the bacon, an egg, the other half of the bacon, cheese, some salt & paper and fresh lemon thyme. Cook for a few minutes, and breakfast is done!

Today I am feeling a little nostalgic… 💛

Mum sent me this photo of her Easter basket called  Święconka, and instantly I was taken back to a different time.

The Polish Easter basket, Święconka (pronounced shvyehn-TSON-kah), is one of the most beautiful and meaningful traditions in Polish culture. It’s not just about food; it’s a symbolic ritual that blends faith, family, and heritage.

Święconka means “the blessing of the basket.” On Holy Saturday, families prepare a carefully arranged basket of foods and take it to church to be blessed. These foods are then shared on Easter Sunday.

Growing up, it was simply part of our Easter. Something we did every year without thinking too much about it.

But now, seeing it from afar, it feels different.

It’s a reminder of where I come from.
Of traditions that stay with you, even when life takes you far from them.

And how something as simple as a basket can hold so much meaning and bring back memories.
