🥭 Mango, Organic Aronia & Coconut Chia Pudding 🥥
A creamy, antioxidant-rich chia pudding layered with sweet mango and the goodness of organic aronia powder. Perfect for breakfast, dessert, or a nourishing snack. 💜
Ingredients
• 400ml organic coconut milk
• 4 tbsp chia seeds
• 1 tbsp organic aronia powder
• 1–2 tbsp maple syrup or raw honey
• 1 tsp vanilla extract
• 1 ripe mango, diced or blended
• Fresh mango slices & coconut flakes for topping
Method

In a bowl or jar, whisk together the organic coconut milk, chia seeds, organic aronia powder, maple syrup, and vanilla extract until smooth.

Let the mixture sit for 10 minutes, then stir again to prevent clumping.

Cover and refrigerate for at least 4 hours or overnight until thick and creamy.

Spoon the chia pudding into serving glasses and layer with fresh diced or blended mango.

Top with mango slices, coconut flakes, and an extra sprinkle of organic aronia powder if desired.

🌿 Ingredients
• 115g organic unsalted butter, softened
• 125g organic brown sugar
• 1 free-range egg
• 2 tbsp linseed meal + 4 tbsp filtered water (flax egg)
• 1 tbsp vanilla extract
• 150g organic wholemeal flour
• 5g sea salt
• 2 tbsp organic aronia powder
• 1 tsp Ceylon cinnamon
• 2 tbsp organic brewer’s yeast powder
• 150g organic oats
• 60g semi-sweet chocolate chips
• 50g raisins
Method

Preheat oven to 180°C and line a baking tray with baking paper.

In a small bowl, mix linseed meal with water and set aside to thicken.

Cream butter and brown sugar together until light and fluffy.

Add the egg, prepared flax mixture, and vanilla extract. Mix until well combined.

In a separate bowl, combine flour, sea salt, aronia powder, cinnamon, and brewer’s yeast.

Gradually fold dry ingredients into the wet mixture.

Stir in oats, chocolate chips, and raisins until evenly distributed.

Scoop tablespoon-sized portions onto the tray and gently flatten.

Bake for 10–12 minutes or until golden. Allow to cool before serving

Sourdough Aronia Doughnuts
Wild-fermented, soft, and infused with antioxidant-rich aronia — these doughnuts are simple, rustic, and deeply satisfying.
Ingredients
• 50g active levain (fed & bubbly)
• 400g filtered water
• 250g tipo 00 flour (or baker’s flour)
• 250g high-protein flour
• 10g Organic Aronia Powder• 10g sea salt
•Rice bran oil or avocado oil (for frying)

Method

Mix the dough
In a large bowl, combine water and levain, mixing until dissolved. Add both flours, Organic Aronia Powder, and sea salt. Mix well until fully incorporated into a soft, sticky dough. Cover and rest for 1 hour.

Stretch & fold
With a wet hand, perform one set of stretch and folds (10–15 times) directly in the bowl to strengthen the dough.

Bulk fermentation
Cover and leave to ferment for 6–10 hours, depending on room temperature, until the dough looks airy and slightly risen.

Shape directly
Heat rice bran or avocado oil to ~175°C. Lightly oil a spoon and your hands. Scoop small portions of dough, gently form, and make a hole in the centre using your fingers.

Fry
Carefully drop the shaped dough into the hot oil. Fry until golden brown on both sides, turning as needed. Remove and drain on paper towel.
Finish
Enjoy warm as they are, or dust lightly with your favourite topping.

🍌 Banana Sourdough Bread with Aronia Powder

Moist, nourishing and naturally sweetened – a perfect way to use sourdough discard with a powerful antioxidant boost

Ingredients:

125 g unsalted butter, softened

100 g organic raw brown sugar

⅓ cup organic rice syrup

1 tsp vanilla paste or extract

2 eggs

3 large very ripe bananas (about 2 cups mashed)

100 g sourdough discard

250 g flour

1 tsp organic Aronia powder

1 tsp baking soda

1 tsp baking powder

1 tsp Ceylon cinnamon

Method

Preheat oven to 170°C (fan-forced) and line a loaf tin with baking paper.

In a large bowl, cream the softened butter and brown sugar until light and fluffy.

Add rice syrup and vanilla, then beat in the eggs one at a time.

Mash bananas and fold them into the mixture along with the sourdough discard.

In a separate bowl, whisk together flour, Aronia powder, baking soda, baking powder and cinnamon.

Gently fold dry ingredients into the wet mixture until just combined.

Pour batter into prepared tin and smooth the top.

Bake for 50–60 minutes, or until a skewer inserted comes out clean.

Allow to cool before slicing and enjoying 🍞

Serving tip: Delicious on its own or lightly toasted with butter or nut butter

Healthy Vegan Carrot & Aronia Cake Bars
Simple, nourishing and packed with antioxidants – these carrot & aronia cake bars come together in minutes using just one food processor
Ingredients:
• 2 carrots (250g)
• 8 Medjool dates (140g), pitted
• 80g oats
• 60g walnuts
• 1 tbsp Organic Aronia Powder (10g)
• 70g shredded coconut
• 1 tsp Ceylon cinnamon
• 1 tsp vanilla paste
• Zest of 1 lemon or orange
Method:
1️⃣ Preheat oven to 180°C.
2️⃣ Add all ingredients to a food processor and blend until a sticky, coarse dough forms.
3️⃣ Press mixture firmly into a lined baking tray.
4️⃣ Bake for 15 minutes. Cool, slice into bars and enjoy
