🌿 Ingredients
• 115g organic unsalted butter, softened
• 125g organic brown sugar
• 1 free-range egg
• 2 tbsp linseed meal + 4 tbsp filtered water (flax egg)
• 1 tbsp vanilla extract
• 150g organic wholemeal flour
• 5g sea salt
• 2 tbsp organic aronia powder
• 1 tsp Ceylon cinnamon
• 2 tbsp organic brewer’s yeast powder
• 150g organic oats
• 60g semi-sweet chocolate chips
• 50g raisins
Method
Preheat oven to 180°C and line a baking tray with baking paper.
In a small bowl, mix linseed meal with water and set aside to thicken.
Cream butter and brown sugar together until light and fluffy.
Add the egg, prepared flax mixture, and vanilla extract. Mix until well combined.
In a separate bowl, combine flour, sea salt, aronia powder, cinnamon, and brewer’s yeast.
Gradually fold dry ingredients into the wet mixture.
Stir in oats, chocolate chips, and raisins until evenly distributed.
Scoop tablespoon-sized portions onto the tray and gently flatten.
Bake for 10–12 minutes or until golden. Allow to cool before serving
