It’s Cassia — a different species. Harsher. Hotter. Up to 1,200 times more coumarin (a compound the European Food Safety Authority has issued warnings about).

True cinnamon — Cinnamomum verum — grows almost exclusively in Sri Lanka. It’s sweeter, lighter, more complex. Made of dozens of paper-thin layers rather than one thick tube. The cinnamon recipes were written for. The cinnamon kings paid for.
