In case you needed an excuse ...

National Apple Strudel Day is celebrated this Wednesday, 17 June, making it the perfect excuse to enjoy this classic dessert.

This super easy version combines in-season tart Granny Smith apples, raisins and cinnamon wrapped in flaky puff pastry for a simple take on the traditional Viennese favourite.

Serve warm with cream, custard or vanilla ice cream for the ultimate winter treat.

Apple and Walnut Puff Pastry Strudel

Ingredients
2 tbsp caster sugar
1 tbsp plain flour
¼ tsp ground cinnamon
2 large Granny Smith apples, peeled, cored and thinly sliced
½ cup walnuts, finely chopped (you can use 2 tbsp sultanas or raisins instead)
1 sheet ready-rolled puff pastry, thawed
1 egg, lightly beaten
Icing sugar, for dusting

Method
* Preheat the oven to 190°C and line a baking tray with baking paper.
* In a large bowl, combine the caster sugar, flour and cinnamon. Add the sliced apples and walnuts (or dried fruit if you prefer), then toss until evenly coated.
* Place the puff pastry on a lightly floured surface and gently roll it into a rectangle shape, approx 30cm x 40cm.
* Spoon the filling onto one half of the pastry, leaving a 2cm border around the edges.
* Fold the remaining pastry over the filling to enclose it, pressing the edges firmly to seal. Transfer the strudel to the prepared baking tray.
* Brush the top with beaten egg and cut a few small slits in the pastry to allow steam to escape.

Bake for 25–30 minutes, or until the pastry is puffed and golden brown.

Allow to cool slightly before dusting with icing sugar. Serve warm on its own or with cream, custard or ice cream.

Air Fryer Cinnamon Sugar Apple Fritter Recipe

With apples at their seasonal best, there's no better time to turn this everyday fruit into a warm, comforting treat. These Air Fryer Cinnamon sugar Apple Fritters are packed with sweet apple and cinnamon flavour, but without the mess or extra oil of traditional deep-fried fritters.

Quick and easy to make, they're perfect for afternoon tea, lunchboxes or a cosy weekend dessert. The air fryer creates a beautifully golden exterior while keeping the inside soft and fluffy, giving you all the deliciousness of a classic apple fritter with a lighter touch.

Fritter Ingredients

1½ cups SR flour
¼ cup caster sugar
½ tsp ground cinnamon
½ cup apple juice
1 tsp vanilla extract
2 eggs
2 apples, peeled and grated
Cooking oil spray

Cinnamon Sugar Coating Ingredients

¼ cup caster sugar mixed with ½ tsp ground cinnamon
50g butter, melted

Method

*Combine the flour, sugar and cinnamon in a large bowl.
*Whisk the juice, vanilla and eggs together until well combined.
*Pour egg mixture into flour mixture and gently mix until just combined.
*Stir in the grated apple.
*Line the air fryer basket with baking paper and gently spoon approx ¼ cup of batter per fritter onto the baking paper, being careful not to overcrowd as the fritters expand when cooking.
*Spray with cooking oil spray and bake for 5 minutes at 200°C.
*Turn fritters and spray again with cooking oil spray.
*Bake for a further 5 minutes or until golden and cooked through.
*Repeat with remaining batter until all fritters are cooked.
*Remove the fritters from the air fryer and brush all over with melted butter before tossing in cinnamon sugar mix.
*Serve the fritters warm.

Plum & Apple Cobbler Recipe

Have you ever made a cobbler?

This old-fashioned baked fruit dessert is easy to make and known for its soft, golden topping that rises as it bakes.

Unlike a crumble, which has a crumbly streusel-style finish, a cobbler uses a fluffy dough or batter topping that sits over bubbling fruit and bakes into a comforting pudding-like dessert.

With plum season almost over, now is the perfect time to make the most of this beautiful fruit while you still can.

Combined with sweet apples, cinnamon and vanilla, this Plum & Apple Cobbler is the kind of dessert made for cosy autumn and winter nights, especially served warm with generous spoonfuls of clotted cream.

Ingredients

700g firm plums, stoned and chopped
300g apples, peeled, cored and chopped
½ cup sugar
2 tbsp cornflour
1 tsp lemon juice
1 tsp vanilla extract

For the cobbler dough
1 egg
100 ml milk
140g cold butter, cut into cubes
280g plain flour
140g golden caster sugar
½ tsp cinnamon
1 tbsp baking powder
2 tbsp demerara sugar
Clotted cream, to serve

Method

In a large bowl, combine the first 6 ingredients and stir to coat fruit before placing in a baking dish.

Preheat the oven to 190°C.

Whisk the egg into the milk and set aside.

Rub the butter into the flour until the mixture resembles chunky breadcrumbs.

Stir through the caster sugar, cinnamon, baking powder and a generous pinch of salt.

Pour in the milk mixture and gently bring together to form a thick, batter-like dough.

Spoon the fruit compote into a baking dish and top with large spoonfuls of the cobbler mixture, leaving a few gaps so the fruit can bubble through while baking. Sprinkle over the demerara sugar.

Drop the batter in large spoonfuls onto the fruit mixture. Bake for 35 minutes, until the cobbler topping is nicely browned and the filling is bubbly.

Leave to rest for 5 minutes before serving straight from the dish with generous spoonfuls of clotted cream.
